Noodle Soup + Nintendo
Late this afternoon Ryan’s cousin Daniel came over to our apartment so the two boys could enjoy an afternoon of throw-back video games.
I wish I could say that the above picture was staged, but the facial expressions and random words coming out of these boys’ mouths were 100 percent original and genuine.
The guys weren’t the only ones enjoying the video games.

I hung out with the guys for a bit before unpacking and starting on dinner.
This evening the three of us enjoyed homemade chicken noodle soup. I had to make an old-school dinner to complement their old-school video games.
I made the soup using my mom’s recipe, which is my all-time favorite chicken noodle soup recipe. It is a perfect cure for both colds and homesickness.
I love chicken noodle soup with a soda on the side.
Mom’s Chicken Noodle Soup
Ingredients
- 4 c. reduced sodium chicken broth
- 1 c. water
- 1 packet Knorr vegetable soup mix
- 2 large chicken breasts, chopped
- 1 large onion, chopped
- 3 large celery stalks, chopped
- 4 carrots, chopped
- 1 package egg noodles
Directions
Pour chicken and water into a pot and simmer. Add chicken and vegetables and let simmer until chicken is fully cooked. Add Knorr vegetable soup mix and let simmer for 20 minutes. Add noodles and let simmer until noodles are fully cooked.
Ta-da! Easy, peasy and so delicious. This recipe will make your house smell ah-maze-ing.

Was the weather not a little hot for chicken soup? The soup looks amazing either way. Cannot wait to try and make it. Fingers crossed I can find the vegetable soup mix in the UK.

In your recipe, you wrote that you add chicken and water together first. Then you add chicken and vegetables. Did you mean that you simmer the chicken broth and water? Or do you add the chicken broth and veggies to the chicken/water?
It looks like a great recipe! Can’t wait to make it now that it’s getting colder!
