The Veggie That Haunts Your Dreams
Stereotypically speaking, most kids have a vegetable (or 12) that they absolutely hate and refuse to eat. Growing up the veggies that haunted my dreams were broccoli and asparagus.
A popular nightmare-inducing veggie is Brussels sprouts, but those lil’ babies make this girl smile!
(Yes, I am well aware that my jeans are way too long. I promise they actually fit when I wear them with my 4-inch wedges, which I promptly took off when I walked in the door. Veggie chopping is a no-heels-allowed sport, after all.)
Tonight’s dinner would probably make any 8-year-old cry for pizza, but it made me and Ryan happy!
We enjoyed broiled sockeye salmon, seasoned with lemon, basil, thyme and sea salt, along with basil fettuccine and Brussels sprouts.
To prepare the Brussels sprouts, I tossed them in olive oil before seasoning them with Mrs. Dash original blend of salt-free spices.
This was a home-run dinner!
Alright, kiddos, I’m outta here for the night to watch The Bachelorette!
Question of the Night
When you were a kid, was there a vegetable that you absolutely hated? Did you ever grow out of it?

I can’t remember any veggies that I hated, but I think it’s because I helped my Dad garden, and we made salsa and all kinds of neato dishes out of our harvest
I definitely adore brussel sprouts too!
Dinner looks so simple yet delicious! Salmon is awesome!
Enjoy your night!

Brussels sprouts definitely haunted me as a kid – and I’ve actually still never tried them!

I had brussel sprouts with dinner tonight as well!
I was kind of grossed out by them for a long time but I recently tried them and fell in love. They might be my new favorite veggie.

I hated lima beans, red beets and brussel sprouts. I still cringe at the sight of lima beans and gag at the smell of red beets, but I love brussel sprouts now!

Cabbage – I have never been able to stomach it and still cannot to this day! I suppose that means no Brussels sprouts for me, too. I’ve never tried them but I assume they taste like cabbage?

I hated lima beans and still do. I like of other types of bean but really hate lima beans.
I have a really good brussel sprout recipe that has garlic and apple cidar vinegar in it – it’s the only way I’ll eat brussel sprouts.
I’m actually not a fan of a single veggie. I eat them because I know they are good for me but I can’t stand them. Corn is the only vegetable I’ll eat because I like it. I can’t seem to change my little tasebuds, after all these years of eating veggies I still haven’t started to like them.

My most hated vegetable was kohlrabi. I’m definitely traumatized my mom forcing me to eat it as a kid – haven’t tried it since!

I went through a phase of not liking regular/white potatoes. (My mom wasn’t too happy since we were a huge meat and potatoes kind of family.) However, these days there’s only a handful of ways I like them prepared.
I am also using salmon in our dinner–Salmon Chowder.

i really don’t like uncooked onions.

I love brussels! They’re so tasty roasted. I hated spinach and mushrooms growing up. I still loathe mushrooms, but I love raw spinach. I only ever had it cooked as a kid, which still grosses me out!

I hated broccoli and cooked spinach. I still can’t stand either of them, I will eat raw spinach in salads or green monsters but I despise it cooked… and broccoli, cooked, raw, whatever, makes me gag. Yes I am 26 years old and I will gag on broccoli
But, when I was little, (and still to this day,) I loved the veggies that most people don’t like, such as asparagus, eggplant, artichokes, and tomatoes. LOVED them.

I used to hate uncooked bell peppers and finally last year I was chopping one for another dish, and decided to scoop up a blob of hummus with a raw piece and try it. Delicious! I find it strange that peppers bothered me so much when I would happily eat asparagus, broccoli, brussel sprouts or any other veggies that aren’t usually kid friendly.

I actually made brussel sprouts for the first time last Friday. I did not know what to do so I just roasted them with olive oil, salt and pepper. I’m not sure what they are supposed to taste like but mine tasted fishy and I don’t think thats normal. I may try them again with different spices but so far this is the only veggie I am not a fan of.

Ah! When I was younger my mother was living with a boyfriend who was in charge of making dinner every night. Whenever he was mad at my brother and I he would cook fish and steamed brussels sprouts (2 things my brother and I hated). That’s exactly what this meal reminded me of.
But now, I absolutely lovelovelove brussels sprouts (roasted, not steamed). Funny how things change.

I made the fish by placing it on a cookie sheet lined with foil and sprayed with cooking spray. After spraying the fish with cooking spray and seasoning it with a mixture of lemon, thyme, basil and salt, I broiled it in the oven until the fish flaked with a fork.

Yellow Squash! I had this great aunt who made the very best blackberry cobbler in the world! The problem was that you had to eat everything on your plate in order to have any. The adults fixed plates for the kids and our plates ALWAYS had yellow squash. I tried holding my nose, I tried mixing it with corn, even covering it with gravy or ketchup. I still hated it. But you know what? I am now 46 years old and it is my FAVORITE veggie! Funny how that works, huh?

Oh boy did I hate ALL vegetables when I was younger! That’s right, I wouldn’t touch one! If my spaghetti even has one tiny spring of parsley on top… I wouldn’t eat it! Man has that changed though because now if my parsley touches pasta, I won’t eat the parsley! ha ha!
When I make brussels sprouts I marinate them (after steaming them a bit) overnight (or for at least a few hours) in a huge tub of olive oil & garlic… then I spread them out over a baking dish and bake them in a convection oven(it makes all the difference) for about an hour or so @ 350. So delicious! To finish them off I sprinkle with salt, pepper & lemon juice.
