Normally I stick with my mom’s homemade chicken noodle soup recipe because it never fails me, but I didn’t have any egg noodles on hand, so I went an easier route.
Boxed soup mix!
I took this soup mix out of my parents’ pantry ages ago and it has been sitting in our pantry for months. The soup comes in a two-carton pack (I used the other pack as a post-long run breakfast during my half marathon training), and today I finally used the final pack and doctored it up with lots of extra vegetables (carrots, corn and onion) and chopped chicken breast.
I let everything simmer on the stovetop for a good 35 minutes so the flavors would really sink into the broth.
This super-simple soup ended up being pretty darn fantastic. A great dreary-day meal.
Now that we have warm soup in our bellies, Ryan and I are off to take Sadie on a pitch-black evening walk. We’re in the mood for some fresh air!

Enjoy your walk! I love soup!

I used to be obsessed with those Mrs. Grass boxed soups – especially the one with extra noodles

That soup look so yummy for a chilly evening! I can’t wait to get my nose out of the books and back into the kitchen where it belongs. Finals week stinks big time! Enjoy your walk.

Your soup is so colorful! And I particularly like this one because it’s what I had for dinner as well

I had soup for lunch and went on a chilly evening walk with Maverick! Soup and cold temps are just a perfect combo.
Bess @ Bess Be Fit
I made soup too because it’s rainy and gray and O-town. And a grilled cheese sandwich!
Sabrina
I’m not really sure how corn got such a reputation as a vegetable, but it’s definitely a grain, not a vegetable. Since you listed it as a vegetable, I’m just commenting for future reference!
Julie
good call! thanks!!

My mom has a patented chicken soup recipe too, even though others are good they just aren’t quite right. Have a great night walk!
Paula @ lipstick and lunges
I always want to make chicken soup with leftover chicken carcass after we roast one, but it always seems like too much trouble to start from scratch. This looks ilke a great compromise!
Meg @RunRideLove

Somewhat chilly evening walks are the best.
Although, I’m starting to miss evening spring walks now. I’ve been eating so much soup lately too~
Ellie@fitforthesoul
I bet your mom bought that soup at Big Lots. I LOVE Big Lots. Didnt know you had them in Florida (and I can tell from the PRICE TAG…that’s how familiar I am with bargain places)!

Hilliary @Happily Ever Healthy
Woho, what kind of chicken can survive monthS in the pantry?
nina
I have a box of broth that is begging to get used and really should make a batch of homemade soup rather than relying on Mr. Campbell
Allison
Soup looks so simple! I love eating soups and chili’s when it’s dreary and cold outside…:)
Brandi @ Fitness Faith and Laughter
I LOVE that you shop out of your parents’ pantry. I used to do that all the time when I lived much closer. In fact, it’s one thing I miss the most about living 10 hours away from them now!
