Semi-Homemade Chicken Noodle Soup

It’s a rather gray evening in Ocala which made me immediately crave comfort food in the form of chicken noodle soup.

Normally I stick with my mom’s homemade chicken noodle soup recipe because it never fails me, but I didn’t have any egg noodles on hand, so I went an easier route.

I took this soup mix out of my parents’ pantry ages ago and it has been sitting in our pantry for months. The soup comes in a two-carton pack (I used the other pack as a post-long run breakfast during my half marathon training), and today I finally used the final pack and doctored it up with lots of extra vegetables (carrots, corn and onion) and chopped chicken breast.

I let everything simmer on the stovetop for a good 35 minutes so the flavors would really sink into the broth.

This super-simple soup ended up being pretty darn fantastic. A great dreary-day meal.

Now that we have warm soup in our bellies, Ryan and I are off to take Sadie on a pitch-black evening walk. We’re in the mood for some fresh air!

  6. we had a very similar meal last night! our’s was homemade TURKEY noodle soup. essentially the same thing as chicken noodle except i used leftover turkey. t’was delicious for a chilly day! :)

    I’m not really sure how corn got such a reputation as a vegetable, but it’s definitely a grain, not a vegetable. Since you listed it as a vegetable, I’m just commenting for future reference!

  13. I always want to make chicken soup with leftover chicken carcass after we roast one, but it always seems like too much trouble to start from scratch. This looks ilke a great compromise!

    I bet your mom bought that soup at Big Lots. I LOVE Big Lots. Didnt know you had them in Florida (and I can tell from the PRICE TAG…that’s how familiar I am with bargain places)! ;)

    I LOVE that you shop out of your parents’ pantry. I used to do that all the time when I lived much closer. In fact, it’s one thing I miss the most about living 10 hours away from them now!
