If you’re looking for a protein-packed snack that is sweet, chocolaty and perfectly portable, I have a little something up my sleeve that might appeal to you.
Double chocolate protein bites!
I’ve been playing around in the kitchen for a few weeks now, trying to create a yummy protein muffin or cookie. While I found myself happy with a few of the results, nothing was really blog-worthy until these little babies came along.
I am calling them protein bites because they are small – like those decadent two-bite brownies that call to me at the grocery store – but they’re also full of chocolate flavor and filling protein thanks to almond flour and chocolate protein powder.
There are a couple of things I must stress about these two-bite babies. First, you must use a chocolate protein powder that you love. (I used fitmixer chocolate milkshake protein powder.) If you hate your protein powder, I would imagine that you would hate any baked goods that you try to make with it, too.
Second, do not walk away from the oven while they are baking. The key to the bites is that they be slightly undercooked.
Third, do not substitute regular flour for the almond flour and expect the same result. It isn’t pretty.
Now with all the caveats covered, you’re ready to go!
Double Chocolate Protein Bites
Makes approximately 18 bites
Ingredients:
- 1 cup almond flour
- 1/2 cup chocolate protein powder
- 1 tablespoon dark chocolate cocoa powder (If using regular cocoa powder, you may wish to increase this to 1 1/2 tablespoons)
- 1 teaspoon baking powder
- 2 eggs
- 1/4 cup canned pumpkin
Directions:
- Preheat oven to 350. Line baking sheet with parchment paper or spray with cooking spray.
- Combine almond flour through baking powder in a bowl and stir together.
- Add eggs and pumpkin to almond flour mixture and stir well.
- Use a tablespoon to measure out the dough and space tablespoons of dough onto cookie sheet.
- Cook 7 – 8 minutes or until tops of the bites appear solid, but the inside seems slightly undercooked.
- Allow to cool and enjoy.

I generally avoid protein powders (anything that processed strikes me as highly suspicious) but these looks soooo amazing you have me considering bending my rule. So gooey and amazing looking.

You could leave out the protein powder and increase the flour and most likely get a pretty close result. However, if the protein powder is sweetened you would probably want to add a sweetener.

I use vanilla chi Raw One protein powder…it’s actually only good in baked goods, kind of gross in smoothies! Happy Sunday!

oh, yum! pumpkin is a smart addition- whenever i bake with protein powder, things tend to dry up. i imagine this will keep them nice and moist…yet healthy.

I tried you yummy recipe and then tweaked it the second time.
I substituted 1 cup of almond flour for 1 cup of pumpkin flour. 1/4 cup of chocolate protein powder for 1/4 of vanilla. I also added a tbsp of honey.
These were delish!

Mine were looking a little dry, so I added about 1/8 of a cup more of pumpkin, and a tablespoon of agave. They turned out great, but definitely would have been dry without it!
