Green Protein Pancakes
At my sister’s bridal shower this weekend, I spent some time chatting with one of her friends who is really into green smoothies. We obviously share this love since I make myself a green smoothie of some sort multiple times a week. When she asked me whether or not I’ve ever made green protein pancakes, my interest was immediately piqued.
She told me that she will add a handful of spinach to her protein pancakes before she blends everything together and I was intrigued enough to give green pancakes a try this morning.
While the green pancake I made looks like something the Grinch or Shrek would love, it was surprisingly delicious!
I’m sure you could play around in the kitchen and add a handful of spinach to a number of protein pancake recipes, but I combined the ingredients listed below with an immersion blender this morning and loved the end result.
- 1 cup egg whites (I use the kind from the carton)
- 1 handful fresh spinach
- 1 tablespoon almond butter
- 1/2 cup old fashioned oatmeal
- 2 packets stevia
- Cinnamon to taste
Yes, it looks rather scary, but the pancake was really tasty! It’s worth a try if you can get past the vibrant green color.
A quick note: I made my pancake in a small skillet and I think the batter might be a little too runny to make on a griddle. I first tried pouring the batter on the griddle and the pancakes looked like they would’ve been really thin. Cooking a single pancake in a small skillet resulted in a single thick, fluffy pancake.
Not a bad way to start a Monday!
