Spiced nuts are a personal favorite! If your mouth doesn’t start watering at the smell of cinnamon spiced nuts roasting away in the oven, I’m convinced you may be a robot.
When Ryan and I would visit the Bob Carr Performing Arts Center in Orlando to see various musicals and plays, during intermission we’d walk out into the lobby and inevitably be hit with the sweet smell of spiced candied pecans. I could never resist buying a small cone of the nuts and Ryan and I would always polish them off before we managed to make it back to our seats for the rest of the show. Love ‘em!
I recently received an email from Nuts.com offering me the opportunity to try some of their healthy snacks, nuts, dried fruit, assorted quality baking and cooking ingredients and other treats on their website. The whole nuts were, in fact, whole (you’d think this would be a given, but I’ve ordered nuts online in the past only to receive broken pieces) and the almonds tasted just as delicious raw as they did when I roasted them and used them on top of green beans and Brussels sprouts.

Description
Of course tossing pecans, cashews, walnuts, and almonds in a bit of maple syrup, cinnamon, pumpkin pie spice and vanilla extract takes them to the next level!
Ingredients
- 2 egg whites
- 3/4 tablespoon vanilla extract
- 2 tablespoons maple syrup
- 1 cup raw cashews
- 1 cup raw almonds
- 2 cups raw pecans
- 2 cups raw walnuts
- 1/2 cup sugar
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon pumpkin pie spice
Instructions
- Preheat oven to 350 degrees.
- Whisk together egg whites with vanilla extract and maple syrup. Combine all nuts together and toss in egg white mixture.
- In a small bowl, combine sugar, cinnamon and pumpkin pie spice. Pour spice mixture over nuts and toss to coat.
- Spread nuts onto a cookie sheet sprayed with cooking spray and roast for 15 minutes. Flip and roast for an additional 5 – 10 minutes, watching closely so nuts brown slightly but do not burn.
- Allow to cool before storing in an air-tight container. Enjoy!
