On Sunday or Monday night, I cook up a big batch of wheat berries and then incorporate them into lunch, dinner and snacks throughout the week. They’re chewy, high in fiber and taste great tossed with roasted vegetables, sprinkled on top of Greek yogurt with a drizzle of honey or even on their own.
Last Friday, I made a fantastic lunch that centered around wheat berries.
If you’re a big fan of traditional Waldorf salad made with chicken, I think this lunch may be right up your alley. It’s a vegetarian dish that is super filling thanks to the high-fiber wheat berries and protein-packed Greek yogurt.
Since I first made the salad on last Friday, I made it again, but slightly sweeter, so below you will find two variations of the salad.
Wheat Berry Waldorf Salad (Savory)
Ingredients:
- 1 cup cooked wheat berries
- 1/2 green apple, chopped
- 1/2 cup grapes, sliced in half
- 1 celery stalk, chopped
- 1/3 cup pecans, chopped
- 1/4 cup dried cranberries
- 1 6-ounce container 2 percent Greek yogurt
- 1/2 tablespoon lemon juice
- 1/2 tablespoon lime juice
- Salt, to taste
- Pepper, to taste
Directions:
- Combine wheat berries through cranberries in a large bowl
- Combine Greek yogurt, salt, pepper, lemon and lime juice in a small bowl
- Pour Greek yogurt “dressing” on top of the wheat berry mixture and stir well until everything is coated
- Enjoy!
Wheat Berry Waldorf Salad (Sweet) <—My favorite!
Ingredients:
- 1 cup cooked wheat berries
- 1/2 green apple, chopped
- 1/2 cup grapes, sliced in half
- 1/3 cup pecans, chopped
- 1/4 cup dried cranberries
- 2 tablespoons golden raisins
- 1 6-ounce container 2 percent Greek yogurt
- Honey, to taste (Recommended: 1/2 teaspoon)
- 2 tablespoons fresh mint leaves, chopped
Directions:
- Combine wheat berries through cranberries in a large bowl
- Stir honey into Greek yogurt
- Pour Greek yogurt on top of wheat berries mixture and stir well until everything is coated
- Enjoy!
