Roasted Grape and Ricotta Toast

A wonderful combination of flavors with an outcome that is summery, simple and very delicious!


  • 3 cups fresh grapes (I used a combination of red and green)
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 cup ricotta cheese
  • 1 baguette
  • Honey, to taste
  • 3 tablespoons crushed almonds


  1. Preheat oven to 425 degrees.
  2. Toss grapes in olive oil and salt and spread onto a cookie sheet sprayed with cooking spray. Roast for approximately 25 minutes, shaking the pan periodically to ensure even roasting.
  3. Slice baguette into thick slices and toast. Top with ricotta cheese followed by the roasted grapes, crushed almonds and drizzle of honey. Enjoy!
