Description

This filling and slightly sweet Greek yogurt chia seed pudding parfait is gluten-free and packed with protein, healthy fats and fresh fruit. Enjoy it for dessert or a fun breakfast in the morning.


Ingredients

Scale
  • 1 cup milk of choice (I love almond or coconut milk)
  • 1/4 cup chia seeds
  • 1 6-ounce container plain Greek yogurt
  • 12 tablespoons maple syrup (depending on preferred level of sweetness)
  • 1/2 cup Van’s gluten-free banana nut granola
  • 1/2 cup pecans
  • 1 banana, peeled and sliced

Instructions

  1. Combine milk, chia seeds, Greek yogurt and maple syrup in a medium-size bowl. Stir to combine and break up Greek yogurt clumps.
  2. Refrigerate for two hours or overnight to allow chia pudding to thicken.
  3. Divide half of the chia pudding between two cups. Top with half of the toppings, evenly distributing the granola, pecans and banana slices between the bowls.
  4. Add another layer of the chia pudding on top of the toppings.
  5. Top each parfait with remaining the remaining toppings and enjoy!
