Trust Me on This One: Brussels Sprouts Salad

As a regular food blog reader, I frequently see posts from other bloggers and think to myself Ihave to make that!

Usually that occurs when I see amazing sweets or decadent desserts, like Mama Pea’s s’mores pie or The Pioneer Woman’s caramel apple sticky buns, but every once in a while a veggie dish catches my eye.

That happened earlier this week when I was catching up on blog posts through my Google Reader.

Jessica, queen of all things butter and bacon, actually had me drooling over Brussels sprouts. She posted a recipe for shredded sprouts salad that called for shredded Brussels sprouts, bacon and cheese. I knew I had to make it!

I loosely followed her recipe and enjoyed a delicious shredded Brussels sprouts salad for lunch this afternoon.

Brussels Sprouts Salad

Last night I roasted Brussels sprouts in the oven after tossing them in olive oil, garlic salt and pepper.

I then shredded the roasted sprouts in my food processor before topping them with Parmesan cheese and crumbled Morningstar Farms veggie bacon.

This salad was great! Unfortunately I ran out of Parmesan cheese as I was topping my salad. More Parm would’ve taken this salad to the next level!

    Oh gosh, don’t even get me STARTED on the love of Mama Pea’s recipes 😉 I have so many on my to-do list, haha!

    This recipe looks amazing, and Jessica is one smart cookie. Brussel sprouts are amazing!

    I really hope I can experiment and begin liking more veggies…right now my list consists of: broccoli, cauliflower, carrots, corn, peas, asparagus, spinach, romaine lettuce, artichokes

    This looks really good! I’m just picky. 🙁

    That salad looks great except for the bacon. I’m not a big bacon fan. Brussel sprouts are delish! I just tried them for the first time a few months ago! 🙂

    I loved that you subbed the veggie bacon for the real stuff- I’d never even thought to do that!! I always DROOL over Jessica’s recipes, but I’m not quite as much of a bacon lover as she is 🙂 Your way is a great veg-friendly option!!

    Thanks for sharing this. I have been having trouble getting to Jessica’s website this week. Sometimes it works, sometimes it doesn’t. I definitely missed this one. I’ve been wanting to dive into making brussels sprouts myself but have been a bit nervous about it. This looks pretty easy and delicious! 🙂
