Takes Me Back…

Today’s lunch took me back in time to the first year of my life in the “real world” after I graduated from college.

I’ve always loved food, but I haven’t always loved cooking. Baking, on the other hand, has always been near and dear to my heart (maybe it’s because of my enormous sweet tooth?).

When I graduated college, my meals were typically confined to Lean Cuisines, quesadillas, oatmeal, eggs and Lean Pockets… basically foods that were simple and fast… and nutritious, no? 😉 During this time Ryan subsisted on peanut butter and jelly sandwiches.

Once I realized that preparing my own meals could be really easy as well (it takes less than four minutes to steam veggies!), my meal options opened dramatically and I began to really enjoy creating healthy and tasty meals for myself and Ryan.

I enjoy knowing what I am putting into my body rather than crossing my fingers and hoping that there’s nothing too harmful in the long list of ingredients on the back of frozen meals.

With that said, I do enjoy a frozen entree every now and then. Since I’m making an effort to avoid the grocery store this week, I relied on a frozen Lean Cuisine to get me through lunchtime.

I beefed up the beef pot roast by adding bunch of fresh portobello mushrooms.

I am amazed at how much the addition of my mushrooms enhanced this meal!

Do you eat frozen meals? Any favorites?

Though I don’t eat them often, my favorite frozen meals are the Kashi entrees. The Southwest Chicken is delish!

    Would you believe that I’ve never had a frozen meal?! Like no lean cuisines or anything. I have had frozen pizzas, and just last month had an Amys burrito for the first time. it was good!

    i love frozen meals!!! i rely on them so much with college (no time to barely study and party 😉 i like amy’s products and kashi and this other ethnic brand that makes indian dishes

    I sometimes eat Birdseye frozen meals, usually lasagna. Unfortunately we don’t get Lean cuisine over here or I would eat them.

    Not going to lie I eat Lean Cuisines every now and again….and I buy frozen organic chicken….and frozen tilapia….

    My favorite frozen meal to go to when I am in a rush is Pad Thai by Glutino (it is a gluten-free brand) and it is so yummy!

    i like frozen meals, except they are always teeeny! But i agree- kashi are the best 🙂 i like thes weet n sour chicken one

    i love the kashi entrees and rely on them a lot for dinner! i always add a side salad with veggies though.

    but my favorite is def. the southwest style chicken one too 🙂 so delish!!

    sweet sour n chicken and the tuscan veggie bake are verry good too!

    I DEFINITELY went through a huge lean cuisine/lean pocket phase too. I don’t regret it; when you’re in school sometimes you NEED a 2 minute microwaved “meal” to shove down while you’re rushing off to the next activity. I still love any and all of the Kashi frozen foods, especially the Mayan Harvest Bake, because it’s something I wouldn’t be able to make on my own!
