A-Camping We Will Go

The weekend is almost here!

My office is a bit of a ghost town today. It’s hard to concentrate and hunker down when so few people are working, but I’m powering through.

Once I get off work, the weekend officially begins and Ryan and I will head two hours north to join several of our friends for a camping trip, complete with lots of s’mores, hot dogs, beer and all-around unhealthy fare.

Fortunately I did stock up on some healthy nibbles as well. Aside from the camping staples, Ryan and I are keeping our food nutritious and are bringing:

  • Red and green pepper slices
  • Grape tomatoes
  • Raspberries
  • Hard-boiled eggs
  • Whole wheat hot dog buns
  • Strawberries
  • Cucumber slices
  • Peanut butter
  • Apples
  • Granola

In past camping trips with our friends our meals consisted of Clif bars, peanut butter sandwiches, hot dogs and canned soup. This time, I’m hoping to squeeze some fresh produce in there as well!

I am particularly excited to break into the grape tomatoes we’re packing.

Plump Tomatoes

I added quite a few of the plump red guys in my lunch salad, and they were sweet, slightly crunchy and very flavorful. I think this time of year must be their time to shine or something!

In All Their Glory

My lunchtime salad included:

  • Romaine lettuce
  • Cherry tomatoes
  • Cucumber
  • Goat cheese
  • Balsamic vinegar

Big Salad

On the side I had the ridiculously addicting Rold Gold honey wheat pretzel twists, which I dipped in Greek yogurt that I sweetened with honey.

I feel like I have a food-baby belly right now! That salad is sittin’ like a rock… but it’s keeping me full. 😀

    how fun, we’re going camping this weekend too! i love those pretzels by the way, they’re the only ones i like! i would definitely say i’m more of a city (or suburban) girl, but i do love camping…it’s fun to be out in nature, the elements, and really OUT of my element!

    I love your camping snack ideas! It’s definitely a challenge to eat nutrionally outside of the home. I love being outdoors, but am not a huge fan of camping. The last time I went was in the Florida Keys. Everything was beautiful and serene until a storm came and almost blew away our tent! The tent was so damaged that we had to cut our trip short. 🙁 Have fun this weekend!

    I’ve never been camping, well unless you count the time I stayed in my in laws really nice RV. I didn’t even like that. I’m a city girl all the way.

    LOVE camping! ANd miss it! I’m def a country girl…born and raised in a tiny town (my parents, family and friends all still live there, so I visit alot), but now I live inthe city. I miss it, but I like the conveniences of the city, Luckily, I work in the boonies still, so I get to experience it everyday still.

    I’m not a huge fan of camping, but I usually go every year for the hubby’s sake, up in Lake George, NY. We usually go with a pretty big group, which makes it fun, but they insist on going to these islands that have NOTHING (no running water, toilets, etc…) and you can only get there by boat.
    Maybe if they weren’t so “hardcore” about their camping, I’d be more excited to go 😉

    Camping is soooooooooo fun minus the bug bites!!! lol!! Please tell me you will be having smores this weekend!!!!!!!!!!!!!!!! Ahhhhhhhhhh love smores!!!!

    I love those little tomatoes too, I buy them to add on my salads all the time!

    That salad reminds me of one of mine! Love it! I’m not a big camper… actually I don’t think I’ve ever been REALLY camping… with a tent… sleeping bags… canned beans… etc. 🙂 Just not sure it would be my first pick… but I think it would be interesting to try! Have fun!

    Camping is so fun! I am a country girl….. I have grown up and lived in a small country town my whole life 🙂

    Those pretzels are so yummy! I have never thought about dipping them in greek yogurt with honey- I bet that is good. I’m going to try that sometime. Have fun this weekend!

    oh i’m so not a camping girl hahaha i hate to admit it but i’d be down to do all the shibang during the day but at the end of the night give me a hotel room and a bed.

    I’m definitely a city girl, but I’ve just come to realize that I love camping!!! Especially if hiking is involved!

    You will NEVER find me camping in the outdoors. The only camping you will ever find me doing is camping out in a hotel room for a few nights!! lol
    While i dont like camping, i hope that you have a GREAT weekend!! 🙂

    I love a perfectly ripe grape tomoato!

    My son and I made those peanut butter pretzel truffles this morning for the daddy. They were a huge hit – they are ALL gone!!!!!

    Have fun camping! I’ve never actually been, but it sounds like a lot of fun–just not something I would be able to get any of my friends to do with me! S’mores really are the perfect food, though. :]
