Back with a Bang

August 22, 2011 by Julie 68 Comments

I knew I’d bring greens back into my life today and I must say they debuted with a BANG!

Roasted green beans, baby.

Growing up, green beans were one of the only vegetables I actually enjoyed. My mom would steam them or boil them and top them with a bit of butter, salt and pepper.

When I began cooking for myself after I graduated college, I followed her method and continued to enjoy them. It wasn’t until I began roasting vegetables that I realized that I liked nearly every vegetable better roasted.

When I first tried roasting green beans, it didn’t go so well. I burnt them. Bad.

Fortunately I learned my lesson and every subsequent batch of roasted green beans I’ve made has come out slammin’.

Tonight I made them for my family and received rave reviews.

Dinner included roasted beans, pork chops, chicken sausage and sweet potatoes.

It feels so good to have healthy foods back in my diet. So, so good.

Know what else feels good? Watching trashy television (Bachelor Pad) with someone who enjoys is just as much as you do (my sister) and an adorably sleepy dog at your side.

And another good thing? I found a gym with BODYPUMP near my parents’ house!!! I am seriously psyched and can’t wait to pump it up tomorrow morning!

Be sure to follow PBFingers on Instagram and Facebook!

I'd love to connect with you! I am always so grateful when you let me know you tried one of my recipes or workouts and tag me in your photos or updates. Thank you so much!!!

YAy! Three cheers for Body Pump! I am literally so excited for you, which is a little bizarre since I don’t actually know you in “real life”…but I really am happy for you, lol! 🙂 Hope you have an amazing time pumping it up!
Your dinner looks delicious…and I totally agree. Every vegetable tastes good roasted…so so good. My mum’s roasted veggies are my favourite food she makes in the whole world. Yum! Take care! xyx

My sister and I always inevitably end up watching trashy TV when we’re together too! Haha. It’s so great when you have someone to understand it’s horrendous glory 🙂

I cooked roasted green beans for dinner last night, but my family and I like them burnt and squishy, just not TOO burnt 🙂 I cannot wait to hear your thoughts on Bachelor Pad today! Please tell me you laughed as hard as I did when Kasey randomly burst into song with his already weird sounding voice!!!! I actually died.

That meal looks like my Dear would eat every night if he could!

I’ve been roasting veggies a lot lately- my faves: cauliflower, broccoli, asparagus, carrots, and yellow squash… I like how the edges get a little “charred” 😛

I am about to lose Body Pump from my life. I was working at my gym part time, but won’t be after this week. I do not know how long I will be able to live without it.

Do you fee like the “Sweet Child of Mine” track is super hard? It has been killing me!

    Hi Julie!

I LOVE ROASTED VEGGIES! I seriously have an addiction to roasted brussle sprouts, ugh way to good!
Also- Because you ALWAYS talk about Body Pump, I researched and have taken two classes, and MAN! They are tough! Great workout!!

Ha – I had steamed green beans and a baked sweet potato with my grilled chicken last night! I used to love helping my mom snap off the ends of the beans as a kid. They’re so good raw that I find I end up eating half of them while prepping dinner! I don’t know how people can eat canned green beans! Have you had green bean “fries”? I coat them with nonstick spray and shake them in bread crumbs, garlic powder, salt and pepper. Then I bake them until crisp. They’re really good!
