Back with a Bang

I knew I’d bring greens back into my life today and I must say they debuted with a BANG!

Roasted green beans, baby.

Growing up, green beans were one of the only vegetables I actually enjoyed. My mom would steam them or boil them and top them with a bit of butter, salt and pepper.

When I began cooking for myself after I graduated college, I followed her method and continued to enjoy them. It wasn’t until I began roasting vegetables that I realized that I liked nearly every vegetable better roasted.

When I first tried roasting green beans, it didn’t go so well. I burnt them. Bad.

Fortunately I learned my lesson and every subsequent batch of roasted green beans I’ve made has come out slammin’.

Tonight I made them for my family and received rave reviews.

Dinner included roasted beans, pork chops, chicken sausage and sweet potatoes.

It feels so good to have healthy foods back in my diet. So, so good.

Know what else feels good? Watching trashy television (Bachelor Pad) with someone who enjoys is just as much as you do (my sister) and an adorably sleepy dog at your side.

And another good thing? I found a gym with BODYPUMP near my parents’ house!!! I am seriously psyched and can’t wait to pump it up tomorrow morning!

    I’ve always loved green beans-ever since I was little! I think the only food I’ve loved longer than green beans are olives. Weird for a baby right?! My parents always tell this story about when they went to a restaurant with me when I was a baby and all they got me was a bowl of olives. I guess I’ve always been a foodie!

    My husband swore up and down he hated so many vegetables until I roasted them for him. He was used to them being mushy from being boiled and didn’t like them. He loooves his veggies now!

    Whoa!! You have it all :the greens, the tv, and the pump 🙂 Lucky you, girl!

    I taught BodyPUMP today and it just makes me oh so happy, so I feel that ‘happiness’ with the BodyPUMP thing too!! ENjoy!

    Roasting takes every vegetable up, like, 20 levels. Green beans are so good roasted, I had them for tonight’s dinner too! I could eat a whole bag in one sitting.

    Good call, pairing them with sweet potato and sausage 🙂

    haha I do the same thing when I miss all the veggie loads after a trip or something! I stuff down a buncha fibrous greens and it feels just sooo good 😀

    Yum! Your dinner looks delicious. And girl, I totally know what you mean about getting back in the kitchen and cooking healthy foods. I lived overseas for nearly a year (just moved back about 2 weeks ago) and didn’t have access to a full kitchen. I was RARING to go when I finally did get home!

    I have to agree 100%, vegetables are amazingly delicious roasted!! They’re great any way, but roasting is by far the best! Green beans and sweet potatoes… Sounds like my kind of meal. Hope you have fun at Bodypump tomorrow!!

    2. My mom’s green beans are my fave: sautee an onion in some butter until super soft, then stir in some bread crumbs. Toss this mixture with some steamed green beans, season, and devour. I could eat an entire serving bowl!

    I need to roast green beans for my husband. He says he doesn’t like green beans, but I think he would like them if they were roasted.

    I hated veggies when I was a kid. I refused salad, so mom would cut up tomatoes on my plate and put Italian dressing on them. Now I love veggies, and I also love trashy TV with the sis!

    Green beans have always been ( and hopefully will always be) one of my favorites. I usually saute mine with onions and garlic. Add a little salt and mmm… I may have been known to eat an entire plate of them alone.

    Haha, green beans are my best friend’s favorite vegetable too! And I have GOT to get some sweet potatoes! My Trader Joe’s hasn’t had them and I’m dying! I keep seeing them all over everyone’s blog!

    we just had our 2nd annual Green Bean Festival in our town which means green bean pizza, green bean slaw , green bean cake and green bean cobbler have all made an appearance. i even made a chocolate green bean smoothie last year that was actually pretty good!!!

    Yum! That looks delicious! Roasted veggies are definitely the best. We are moving on September 1st, too, and have slowly started the empty out the fridge/cabinets process, so we have no good food left!! I don’t know what I’m going to do for the next week, especially since I know I’ll be seeing the delicious goodies you’re eating everyday!

    I’m so ready for autumn weather and roasting big trays of veggies. Not that I don’t love summer and the abundance of tomatoes and other summery produce. I just love roasted root veggies, squash, and sweet potatoes!

    Hey Julie – I have a random question for you.. I’ve noticed that you sometimes eat vegetarian bacon. I’m interested in giving it a go.. What is it like? Does it taste anything like the real thing? What brands do you usually buy? I live in Australia, so I’m not sure if we can get the same brands, but I’d like your suggestions. 🙂

      Hi Sophie, I’m not Julie, but I live in New Zealand might be some help. Here Sanitarium makes vegetarian bacon that you can buy from the supermarket. Not sure if you have that brand, but it’s pretty cheap and tasty!
