Ryan, Sadie and I spent the remainder of our morning on a 3.5 mile hike on our favorite bear, alligator and snake-laden trails.
The wildlife we saw on today’s walk was limited to squirrels and lizards. Vicious beasts!
Lunch
On our way home from the trails, we ran a few errands and grabbed the necessary ingredients for homemade pizza. I think Ryan was a little jealous of my delicious looking veggie pizza from last night and he was craving pizza this afternoon.
When we arrived home, we prepared a pizza topped with spinach, pizza sauce, mozzarella, Italian chicken sausage and avocado.
We didn’t add the avocado until the pizza came out of the oven because we were unsure how it would hold up in 475-degree heat.
I ate three slices of the pizza along with a sliced apple.
Even after eating pizza two times in less than 24 hours, I feel like I could easily eat it again for dinner tonight.
You can never have enough of the good stuff!

My favorite healthy snack would be hummus! With a side of…more hummus! 🙂
oh i have way too many favorite healthy snacks just to pick one. but if I had to choose one, it’d be chickpea poppers- so ridiculously easy and delish. just rinse, drain, towel off, spray with oil/oil spray, season with spices (i like garlic powder, cumin, or nutritional yeast or some combination of the three), and pop in oven at 425 degrees for about an hour. SO GOOD!
My favorite is an apple with hummus! Yum!

I absolutely LOVE eating edamame that has been boiled. I usually just eat it straight up out of the pod. Follow it up with a nice piece of toast with eggplant hummus spread? Amazing.

my favourite healthy snack is carrots and homemade hummus. we make hummus super often so both me and my husband can bring it to school/work for a snack.

hard to choose a favorite snack because there are so many but i’ll go with trail mix that includes assorted dried fruit and nuts (including chocolate covered ones!)

I love to mix fage 0% plain greek yogurt, with a tb spoon of all natural peanut butter and pumpkin with cinnamon … oh my! Its like pumpkin cheesecake!
