Cake ‘n’ Cupcakes

My day has been dominated by cake!

At work today leftover birthday cake found its way onto a plate in front of me a couple of times (2? 3? Who’s counting?)…

Yes, that would be a corner piece for maximum icing.

Lunch

In between servings of cake, I managed to eat a nutritious lunch.

I made a roasted veggie salad comprised of roasted curried cauliflower and carrots…

Topped with chicken salad (chicken + light Miracle Whip + carrots)…

Thank goodness veggies found their way into my lunch because they were sparse in my dinner.

Dinner

Dinner this evening came together in a flash!

Is there anything easier than cooking up a big bowl of pasta?

Ryan had to work a little late tonight, so I made us pasta bowls using Barilla whole grain rotini, marinara sauce and chicken.

While I was prepping the pasta, I got a call from Ryan.

“I have a treat for you!”

“Is it edible?”

“Yes.”

“Is it sweet?”

“Yes.”

“Awesome.”

A chocolate peanut butter cupcake from Sugar Mama’s Bake Shoppe in Clermont.

Holy peanut butter! The icing tasted like super thick and extra sweet peanut butter. It was so good that I rubbed it all over my face. No, I’m obviously kidding. Don’t be silly! I wouldn’t put that stuff anywhere but my mouth.

With the excessive cake consumption that has occurred in the past two days, I’ve realized something about myself. I don’t think cake is all that great. I think I really just eat cake for the icing (with the exception of red velvet cake because that stuff is the jam). (See point #3 of Hyperbole and a Half’s breakdown for my exact thoughts on cake and icing.)

It’s very rare for me to find cake that I think even comes close to the deliciousness of icing. But, when it does, then the cake + icing combo tastes like a little slice of heaven.

I’m off to try to see if I can find any remaining icing on that lil’ cupcake liner! Smile

    Holy cake! That’s a lot of sugar! I agree though. The icing is the best part. I don’t trust someone who only eats the cake and leaves the icing. That’s just wrong. 😉

      you know who else i don’t trust? people who say they don’t like cookie cake. someone said that at work yesterday and i was completely baffled.

    Confession: Sometimes I only eat the top half of the cake in the cupcake in order to get the proper cake to icing ratio.

    Confession: Sometimes I take the leftover cake and mush it into vanilla ice cream for a cake blizzard of sorts.

    Icing is where it’s AT. I admit I usually don’t even eat the cake. *wasteful* Except for carrot cake (now I want some) and high hat cupcakes (that are predominately icing).

    The chef at the KD house here at UT (I live in the house) is trained as a pastry chef. She makes the most AMAZING cupcakes including strawberry cupcakes, peanut butter and jelly cupcakes, red velvet, and so much more! Her peanut butter frosting is amazing!

        Haha it’s a blessing and a curse… absolutely delicious desserts at every dinner! Lots of self restraint required lol… today was pumpkin pie bars!

          No, I live in Austin, Texas. UT referring to University of Texas at Austin, not Utah. I actually did live in Salt Lake City for 8 years before moving to Texas though!

    Cake is nothing without frosting. Frosting is everything without cake. If you’re ever in NYC you NEED to try Crumbs bakery. Cupcakes the size of your head, with a solid inch or two of frosting and candy on top and frosting FILLING as well. It’s amazing.

        I agree about crumbs. It’s amazing. There’s a cupcake place by me (metro Detroit) that sells icing shots. I’m too scared to do it though, I think I couldn’t stop after one!

    HA! LOVE It! I’m such an icing freak. Usually I’ll pretend that I don’t like it when I eat it in large groups because everyone is all “Yuck” and “Eeew” about icing so I pretend to be all grown up and agree, which usually plays well for me as by the time that everyone is done their cake, the tray is left with oodles of icing, so amounts of copious icing fingers find their way into my mouth!

      copious amounts of icing fingers…I’m having cake withdrawals after reading this post which has clearly scrambled my brain and ability to write a proper sentence. I guess I’m going to have to go get some cake so solve this…tragic. 😉

    That surprise cupcake that Ryan got you looks totally scrumptious! I think you should try and recreate it for a recipe post!
    I too think the icing is the best part. Cake isn’t too thrilling to me, but the icing makes me sing vavavoom!

    what a perfect surprise from Ryan…you certainly married the perfect guy! The Chocolate Peanut Butter cupcake is the only way to go…and i love that there is a mini peanut butter cup on top!

    I teach and there has been cake and cupcakes staring at me for 2 days so today everytime I’d go fill up my water bttle I’d grab a bite of leftover icing. Totally doesn’t count as having a piece right? 🙂

    Icing is the best part of the cake.
    Unless it’s strawberry. Love strawberry cake.
    A friend of mine makes cakes, and adds a little bit of flavored extract to the boxed mix. It’s unreal what a little bit does!

    I’m going to tell you something a little dangerous… but you can make PEANUT BUTER ICING at home by combining 1 T of PB and icing sugar (plus milk if the consistency is too dry). That way, you get a little single serving of icing 🙂

    The key is to not make 4 of them in a row like me haha.

    Yes. We are icing soul mates. I only really eat cake for the icing. Icing > cake for sure. My sister doesn’t like too much icing & always leaves some on her plate . . . I have no idea where she came from, but her loss is my gain!
