Is it any shocker that today’s lunch included carrot slices?

Since I had a carrot the size of a toddler chillin’ in my fridge, I knew I better start eating that bad boy since it will likely take me five years to get through the whole thing.

I enjoyed the sliced carrot with cucumber and grape tomatoes alongside a fakie-bacon and cheese sandwich, made with two Morningstar Farms veggie bacon strips.

For a lil’ sweetness, I also included a cup o’ Motts natural apple sauce which brought me back to childhood.

Speaking of childhood, I was am a huge fan of Saved by the Bell and read in a magazine this morning that today is Jessie Spano‘s birthday and she is now 38 years old.

This clearly must be false. She is only 28. Time does not fly that fast!

Anyway, happy birthday Jessie! I’m so excited, I’m so excited, I’m so… scared for you. 😉 (Seriously, who gets that loony on caffeine pills?)

Gourmet Nutrition Book Giveaway

A giveaway two days in a row? What is this?

When Jessica, the wonderful woman behind the new blog Give Away One Thing A Day, contacted me about hosting a giveaway on my blog I was immediately intrigued by the unique concept behind her blog. Jessica started her blog in an effort to bring more positivity into her life and focus on doing something good for others.

When someone wins a giveaway offered through Jessica, they are asked to “pay it forward” by giving away an item of their own and sharing their story with Jessica. (Just FYI, you do not have to have a blog to enter this giveaway. If you win, you may giveaway something to someone you know and simply tell Jessica about it.)

Jessica is offering one reader a copy of Gourmet Nutrition, a cookbook for “the Fit Food Lover.”

    I love new cookbooks! I love new recipes, I read your blog daily and you have really inspired me to start my own. I feel like having a blog and having (at-least a few) people reading it daily, helps hold me accountable. It also encourages me to find and try new recipes. So having a new cookbook would be like everyone having it, because I would share the “goods”. 🙂

    This looks like a great book! I just got engaged and am looking to become healthier so that I can look and feel my best on the big day and so that I can enjoy a happy healthy married life with my new hubby! 🙂

    I love Saved by the Bell too! And I totally remember that episode with the caffeine pills! lol. The actress that played Jessie is actually on CSI: Miami. (I don’t even know her real name!)

    The book looks fascinating.

    Reading your blog encourages me to break out of my normal food habits and try different things. I’ve already gotten myself hooked on cinnamon, pumpkin pie spice, Babybel cheeses and spinach as a direct result of viewing your food choices. Next, per your suggestion, I plan to integrate nutmeg into the mix.

    1) Saved by the Bell is on tv exactly when I run at the gym. So clearly I’m the girl laughing as I run…it’s a little awkward.
    2) I’m trying to convince my mom to use more veggies as a base to meals rather than pasta or meat, so this cookbook would be PERFECT.

    I watched Saved By The Bell this morning while I was getting out of the shower and it was that episode where she was addicted to the caffeine pills…too funny that you referenced it here!!! And no, I can not believe she si 38 although she was probably already in her 20’s when that show was filmed! haha!
