Kettle Corn, Cantaloupe and Cookies, Oh My!

Late this morning, Sadie and I took a walk to the farmer’s market to pick up some veggies and spend some time in the sun.

It was beautiful outside and the heat of the day wasn’t too intense by 10 a.m. so a bunch of people were out and about.

We left the farmer’s market with a small cantaloupe, portobello mushroom caps, Brussels sprouts, celery and a small bag of kettle corn which Sadie and I split as we walked home.

When we arrived home, Sadie and I headed out back to get some sun while giving the cantaloupe time to chill in the fridge.

I came in to enjoy the cantaloupe and baked a batch of red velvet cake cookies.

I made the cookies the same way I’ve made all the other tasty cake mix cookies I’ve featured on this blog:

  • 1 box red velvet cake mix
  • 1/4 c. oil
  • 1/4 c. water
  • 1 egg

After mixing everything together and baking the cookies at 350 degrees for 10 minutes, I dusted them with powdered sugar.

Right now I’m eatin’ one of these bad boys while watching the Orlando Magic game (They’re in the semiinals, if you don’t follow the NBA) with Ryan and his cousin, Daniel.

    Those cookies look BOMB! I just had my first slice of red velvet cake a few weeks ago and I’m officially obsessed. I also just made a batch of cupcakes with a box mix (using a few “healthy” substitutions). We’re soo semi-homemade, haha.

    I love how easy your cookie recipes are!! “Doctoring up” cake mixes is always a good way to go- if you add just a few ingredients, no one can tell they’re not homemade! Hope you have a great evening!

    I made some with added chocolate protein powder and cocoa, blended cottage cheese and egg whites- so good! I love how you are independant and have a great time with Sadie! Glad your weekend was nice!
