Lobster for Lunch

I’m so fancy!

Lobster for lunch… well, kinda. Lobster was definitely in my lunch, but not a full-on lobster tail or anything. 😉

Sure the lobster was stuffed in some pasta (in the form of leftover Monterey Pasta Company lobster ravioli), but the flavor was there in full force.

Lobster Ravioli Sandwich

I spread a wedge of Laughing Cow light original Swiss cheese on one half of a honey wheat Arnold sandwich thin to round out my ravioliwich.

On the side I had a sliced carrot and a cup o’ Chobani Greek yogurt.

You’d think ravioli on its own would be enough carbs for me, but no. I like to shove the pasta poofs between two slices of doughy bread for some carb-on-carb love. 😀

Mother’s Day

As most of  you (hopefully) know, Mother’s Day is this Sunday.

I have plans to head to Jacksonville after work on Friday to spend the weekend with my mom who is currently recovering from surgery at the MayoClinic (the doctors there have been wonderful, by the way).

I can’t wait to see her!!! It’s been so hard to be away from my family the past couple of days because they’re all in Jacksonville together, but I’ll be there soon…

Annnyway, people at work today were brainstorming Mother’s Day gift ideas. I have an idea up my sleeve, but can’t share it since I don’t want my mama getting ahold of my computer and seeing it on the ol’ blog.

Still, I know a lot of people want to do something special for their mom but don’t quite know what to do. Soooo, I ask you…

    i love mother’s day…we won’t be able to go visit either one of our moms, but we’re sending cards and calling to talk to them, and then seeing them later this summer! can’t wait 🙂

    We are having a BBQ on Saturday at my mom’s house for her and my grandma (who is like my second mom) and then we will probably get wild and crazy with some boys vs. girls board games!! haha!

    My mom always loves special “spa” days, so we get her gift certificates for places like that every year.

    We are doing brunch with my parents and great autn and then an early dinner with my husband’s parents, sister, and grandparents. I will be all familied and fooded out by the end of Sunday.

    My mom lives about 4 hours away from me, so we are meeting at the halfway point on Sunday for lunch. I didn’t get to see her last year on Mother’s Day, so I’m happy we were able to work something out this year.

    Jax!? We should all meet up for lunch on Saturday if you aren’t busy doing family things. I’d love to see your mom and sis, and of course dad but I haven’t have the joy of meeting him yet 🙂 Is Ryan going with you too?

    I am in Europe and my mama is in Minnesota :(. I won’t be able to do much but call her. I am with my mother-in-law though so we will most likely go out for lunch, though I am not having any success making a reservation. Everyone and their mother (no pun intended) wants to go out for lunch on Sunday!

    fancy is my favorite word right now. i’m all about fancy food and fancy clothes…my friend says, “friends don’t let friends question fancy.” meaning: you can never be too fancy. haha

    Your lunch choices include ALL of my favorites, except the ravioli…BUT that’s only because I haven’t tried it yet! 😉

    I’ll be hanging out with mom, I’m just not sure what we’re going to do yet (she can’t decide!) Maybe dinner at my house or out (I’m voting for OUT so I can have a night of no cooking) 🙂

    I’m a Mom to 3 and I think I’m getting a spa package. Woo Hoo! I need since the hubby hurt himself so I’m doing it all by myself.
    For my Mom & MIL they are getting a gift and a hug. Kinda lame but I’m just to busy for anything else this year. Last year I made my Mom a turkey dinner. yum!

    I’m making my mom raspberry pancakes & getting her a gift certificate for a mani/pedi. She had surgery on her foot this winter, so her tootsies could use some TLC! Hope your mommy is feeling 100% again soon!
