Pizza Bagel Bites, Now for Grown Ups

Do you remember Bagel Bites? The delicious, pop-able pint-sized bagels? Bagel Bites were once my favorite after-school snack.

My mom would buy them in bulk and my sister and I would heat ’em up in the toaster oven.

My lunch today was an ode to my former love of these lil’ bites. Admittedly, my lunchtime bagel bite was much larger than the little guys from my past.

My grown up version used an Alternative sweet wheat bagel as the crust.

I topped the bagel with tomato basil marinara sauce, sliced plum tomato, spinach and Sargento reduced fat Mexican cheese (my faaaavorite shredded cheese).

I cooked it in the toaster oven until the bagel was crispy on the outside and doughy on the inside and the cheese was ooey-gooey and melted.

This lunch would have made young-Julie quite proud. Old-Julie liked it too. 😉

    oh wow I love bagel bites also Ellio’s pizza!! the square frozen pizaa?? I always had that!!

    I also loved chicken nuggets in bbq sauce mmmm

    Bagel pizzas were a staple for me during pregnancy. So easy and yummy. I totally forgot about how I loved to have those!

    wow i forgot all about those!! i used to go grocery shopping with my dad on the weekends and eat those for my lunches/snacks every saturday! oh the memories of eating stuff like that as a kid haha i think my afternoon snacks consisted of oreo cookies or something

    I used to LOVE bagel bites!
    My favorite snacks was either carrots with ranch, or Chex Mix!

    What a great idea! I have a bunch of mini bagels in my freezer…I’ll have to remember to try this 🙂

    My favorite after school snack used to be about a pound of chips and a gallon of salsa…ha! I wouldn’t really eat anything all day at school, so I’d be FAMISHED by the time I got home…

    If you are wondering why I am just commenting on this post now, it is because I just found you blog late last night and LOVE it!! I didn’t want to miss a beat so I started from the beginning.
    Every day after school I used to have Ritz cracker and peanut butter sandwiches. However, I insisted I make them myself (I was only about 5 when this started) so the jar would get super gross and messy. No one else would dare eat out of it so I always had my own peanut butter jar for after school!!!
