Reuben Sandwich and Sweet Potato Fries

Has anyone else noticed the grocery stores practically shoving corned beef and cabbage in your face? Clearly they know St. Patrick’s Day is on its way!

As a big-time fan of corned beef, I fell for their marketing tactics hook, line and sinker yesterday and bought some sliced corned beef from the Publix deli.

Tonight I used the corned beef to make a Reuben sandwich. I spread a bit of butter on two slices of honey wheat bread, added two slices of Swiss cheese, corned beef, chopped cabbage and a homemade version of Thousand Island dressing and cooked the sandwich on medium-low heat in a skillet.

The end result was jammin’!

I made my version of Thousand Island dressing by combining equal parts light mayonnaise, ketchup and sweet relish before spreading it onto the bread. It looked pretty horrific, but tasted great!

Sides for the evening included roasted green beans and sweet potato fries.

The fries were Alexia spicy sweet potato fries that I snagged using a coupon sent to me through the Foodbuzz Tastemaker Program.

I’ve tried and loved Alexia’s regular sweet potato fries and had high hopes for the spicy variety as well. They were a little too spicy for my liking, though a little bit of ketchup cooled them off enough for me to eat. I’m such a baby with spicy foods!

The underlying sweet potato flavor that I love was there and they cooked up perfectly in the oven. Slightly crispy and not too soggy!

After dinner, Ryan and I took Sadie on her evening walk.

She had a blast while Ryan and I discussed our finances. Oh, yes, it was thrilling!

And now it’s time for a family finance meeting.  I’m going to try to stay awake for this one.

I mean, I have The Bachelor to watch at 8 p.m., after all. Winking smile

    I noticed that just today… the grocery store seems to be overloaded with corned beef! I did my duty to help them out and bought some of course! 🙂 Can’t wait for the many recipes to try using corned beef…

    So glad I’m immune to the Reuben cravings – although it always LOOKS yummy, cabbage and meat on a sandwich just dont do it for me. Steamed cabbage, on the other hand…

    I don’t know how you do it…honest, I eat such a huge bedtime “snack” and it regularly includes chocolate…plus, after dinner, I sit my bum on a couch and only move for food…

    anyway…

    just finished the book “The Descendants”…likely won’t have chance to see the movie…I don’t usually read these kinds of books, but when you rely on the library, you take what you can…SO GLAD i read it…it was so so good…and i could picture George Clooney in the role the whole way through…
    I think you would definitely like this kind of book.

    When I tried those same fries I noted that they were spicy too – I dipped them in a little plain Chobani to cool them off – worked perfectly!

    Oh my goodness, that lunch looks ridiculously delicious, want to come make it for me!!?!?!? Haha. I am just not that creative with my meals sometimes! I need to put forward more of an effort to re-create recipes!

    I do love a good reuben. I was actually in the store looking for turkey pastrami the other day, Too Jays makes a great “Rachel” I think they call it with turkey pastrami…I was kinda craving it! 🙂

    That pretty much looked like the perfect meal to me! This ginger kid loves her corned beef.. and sweet potato fries are A+ (esp. w/ honey mustard dipping sauce), and I can eat about a lb. of green beans no problem! Yum!

    Reubens are my all time favourite! A vegetarian restaurant makes a vegan version which is delicious as well….basically anything with sauerkraut is perfect with me!

    That sandwich looks fantastic! I’m excited to eat corned beef on Saturday. I made it last year in the crock pot and it was incredible. So I’m definitely looking forward to making it again this year! 🙂

    Ugh. Family finance meeting. Those are the worst. I think I struggle with them since we’re both accountants so we are kind of obsessive about these things, and his paycheck is almost double mine, so I sometimes feel a little guilt.

    Love corned beef too!!! And… I finally remembered to snag an enormous bag of Alexia regular sweet potato fries from Costco a couple of weeks ago (I always mean to buy them, but don’t ever remember until after I get home!) and I LOVE THEM. I didn’t know they made a spicy kind.. I’ll probably stay away from those, I’m also a huge baby. (Except when it comes to spicy mayonnaise with sushi.)
