Sausage Veggie Scramble

I think having fresh veggies on hand makes planning healthy meals so much easier. Plus, I want to use the veggies before they go bad, so I’m much more likely to enjoy a meal featuring the nutrient-rich goodies so I do not have to throw away food.

For today’s lunch I prepared portobello mushrooms, yellow squash and Aidells organic chicken sausage on the griddle to create a sausage veggie scramble.

A bed of steamed broccoli served as the base for my lunch, which I shook up to evenly distribute all the different yummy flavors.

I loved the slight (and I mean slight) spiciness from the sausage. It took this plain and simple lunch to another level.

Do you eat more fresh or frozen produce?

I definitely eat more fresh produce. I was actually shocked to find that fresh veggies and fruit go on sale all the time. I generally buy whatever food is on sale at the moment to save money. Certain fruits like raspberries and blueberries I typically buy frozen though since they seem to cost and arm and a leg year round.

Tonight

Tonight is my company’s holiday party. I am picking Ryan up before heading out for cocktails and heavy hors d’oeuvres at a local trendy wine bar.

Should be fun!

Does your company have a holiday party?

I actually planned the holiday party at my first job right out of college. I loved every minute of it! I had everyone submit an unknown fact about themselves and then we read them aloud and people shouted out who they thought the fact was about.

It was really interesting and made you realize just how little you know about some of the people you work with every day. We learned one girl was in a movie with Burt Reynolds when she was younger. Neat, huh?

    A fun fact about me (more for others to make fun of) I’m scared of the dark. I have to have a night light on (except when I’m not sleeping alone) I’m also a Dr Who freak. Right I’m off to runaway and change my identity 😉

    I definitely eat more fresh than frozen. Right now I seem to be on a BIG zucchini kick!

    Hum…a fun fact about me? I have freakishly small feet for my height! Haha! I wear a size 5 – 5 1/2 but I am almost 5’7″! My Dad always teases me saying, he doesn’t understand how I balance! 🙂

    Have fun at your party tonight! My school’s work party was last Friday night. Not many people attended… 🙁 Our own principal didn’t even come, haha!

    i love chicken sausage & portabello mushrooms so that lunch looks perfect to me 🙂 & my mom always grills up some chicken sausages over the summer.. have fun at the holiday party.

    I love Aidella’s sausage! They used to make a pineapple and bacon one that was so great…but I can’t find it anywhere now.

    Fun fact: When I was born, the Dr. broke my collar bone getting me out…and no one realized until months later, when it had already healed.

    Fresh is the best! I did buy frozen green beans yesterday…the fresh ones looked not so fresh.

    At my old job we had a Christmas party and it was fun!

    Our company holiday party was last night. It was fun to hang out outside of work for a while.
    I love buying fresh but frozen lasts longer and can often be just as nutritious!

    I tend to buy more fresh produce, but I cannot deny the convenience of frozen! Your mix looks super healthy and protein packed!

    We had a company get together but it was super low key!

    Fun fact – I am CHIRISH, half Chinese half Irish!

    i always buy fresh fruits and like fresh vegetables better, but i do like to have some frozen vegetables on hand, too.

    I hadn’t realized it but I used to eat lots of frozen vegetables but now, I hardly use them. I go for fresh. That is because of blogging.
