The Veggie That Haunts Your Dreams

Stereotypically speaking, most kids have a vegetable (or 12) that they absolutely hate and refuse to eat. Growing up the veggies that haunted my dreams were broccoli and asparagus.

A popular nightmare-inducing veggie is Brussels sprouts, but those lil’ babies make this girl smile! 🙂

(Yes, I am well aware that my jeans are way too long. I promise they actually fit when I wear them with my 4-inch wedges, which I promptly took off when I walked in the door. Veggie chopping is a no-heels-allowed sport, after all.)

Tonight’s dinner would probably make any 8-year-old cry for pizza, but it made me and Ryan happy!

We enjoyed broiled sockeye salmon, seasoned with lemon, basil, thyme and sea salt, along with basil fettuccine and Brussels sprouts.

To prepare the Brussels sprouts, I tossed them in olive oil before seasoning them with Mrs. Dash original blend of salt-free spices.

This was a home-run dinner!

Alright, kiddos, I’m outta here for the night to watch The Bachelorette!

    I have always hated mushrooms. Yick…smelly little funghis! And I used to hate eggplant but can now find ways to make it so the texture is far better.

    As for the jeans, I buy all my clothes to fit 4″ heels. I’m at a loss when I where jeans that go to my ankles! 🙂

      I made the fish by placing it on a cookie sheet lined with foil and sprayed with cooking spray. After spraying the fish with cooking spray and seasoning it with a mixture of lemon, thyme, basil and salt, I broiled it in the oven until the fish flaked with a fork. 🙂

    Not a fan of okra or turnips…or anything canned. Fresh only, or frozen in a pinch.

    mmmm salmon RULES love it! 🙂 brussels are so delicious! 🙂 have you ever tried grilling them? they are SO SO good!!! i used to HATE toamtoes (I know they are a fruit, but I always put them in the veggie category) now, I love them!

    Yellow Squash! I had this great aunt who made the very best blackberry cobbler in the world! The problem was that you had to eat everything on your plate in order to have any. The adults fixed plates for the kids and our plates ALWAYS had yellow squash. I tried holding my nose, I tried mixing it with corn, even covering it with gravy or ketchup. I still hated it. But you know what? I am now 46 years old and it is my FAVORITE veggie! Funny how that works, huh?

    that salmon looks delicious! i dont remember hating any veggie but i remember hating being forced to drink milk at dinner. I still hate milk!

    OMG I LOVE Brussels sprouts! when I was a kid I’m not sure I would go near it but I absolutely love them now! 🙂

        toss in olive oil, salt & pepper and roast on a cookie sheet (sprayed w/ cooking spray) at 375 for 25 min, flipping halfway through. yum!

    Oh boy did I hate ALL vegetables when I was younger! That’s right, I wouldn’t touch one! If my spaghetti even has one tiny spring of parsley on top… I wouldn’t eat it! Man has that changed though because now if my parsley touches pasta, I won’t eat the parsley! ha ha!

    When I make brussels sprouts I marinate them (after steaming them a bit) overnight (or for at least a few hours) in a huge tub of olive oil & garlic… then I spread them out over a baking dish and bake them in a convection oven(it makes all the difference) for about an hour or so @ 350. So delicious! To finish them off I sprinkle with salt, pepper & lemon juice.

    When I was a young girl, I hated brussel sprouts…I still don’t like them very well, but want to try them your way.

    I will NEVER find a likeness for Okra, though….their texture is way to slimey for me.
