When Caramel Corn Becomes Dinner

May 3, 2011 by Julie 61 Comments

Remember how I was procrastinating packing for Europe until late last night?

Well, guess who’s all packed while her family is scrambling around this evening?

packing 006

Ooooh yeah.

I think I’ll just sit back and eat boatloads of caramel popcorn and watch the hysteria that always falls upon this household the day before a major vacation.

packing 001

Speaking of the caramel corn, that is basically what I had for dinner tonight.

Of course I didn’t plan to eat caramel corn for dinner, but my family didn’t end up sitting down to eat until after 8 p.m. and I’m used to eating closer to 6 p.m.

My stomach wanted food and since the caramel corn was sitting prevalently on my parents’ kitchen counter, that’s exactly what I ate. I’m so bad about waiting to eat dinner until later in the evening. I like eating early and can’t seem be able to tide myself over with just a snack. I keep eating and eating. I just want my evening meal!

The caramel corn called to me when I saw that it was from Skokie, Illinois!

packing 002

Being a former Illinois-girl myself, when I recognized the town of Skokie on the label of Zelda’s Sweet Shoppe spring caramel corn and pretzel mix, I dove right in. It didn’t disappoint and the white chocolate drizzle over the caramel corn and pretzels melted in my mouth.

Between the copious amounts of caramel corn, watermelon and pita chips I snacked on before dinner, I wasn’t even hungry by the time my mom served up some stir-fry.

packing 003

Still, it was pretty darn good and I refilled my plate three times. I figured my body would appreciate some nutritious veggies and protein-packed chicken a little more than my sugar-laden snack choices.

I’m now blogging in bed and am on a mission to get to sleep a bit early tonight. Our flight leaves in the early afternoon so I’m planning on waking up early for a quick workout and shower before we take off.

See ya in the morning!

A quick little side note: Can someone please tell me what the “insert” key is used for on the keyboard of a computer? I am honestly at a loss to figure out its function other than to annoy people who accidentally hit it as they try to edit or type.

Be sure to follow PBFingers on Instagram and Facebook!

I'd love to connect with you! I am always so grateful when you let me know you tried one of my recipes or workouts and tag me in your photos or updates. Thank you so much!!!

I can’t wait for late dinners either!! My usual dinnertime is anywhere from 5-6, and then I snack a few times before bed. The latest I can hold out till is 7- tell me the reservation isn’t until 8:30 and I will likely eat the entire kitchen.

The insert key types over text at a 1:1 ratio. So if I type “weird” first and want to replace it with “witch” I can hit insert and then type over “weird” and hit insert to stop that. I guess it is useful if you know you want to delete part of a sentence?

That used to happen on my old computer all the time! Except I didn’t realize I’d hit the key so I didn’t know to hit it again. Sooo annoying! Especially if I was working on my novel at the time. My Mac doesn’t even have an insert key though. It must be called something else

Yay for caramel corn! Yummy 🙂 Okay…so I *think* the insert key is basically for one of two things: 1) if you type something and realize halfway through that you want to go back and ADD something else in, you can put your cursor at the spot you need to add and it will just push all of the text after that spot to the right. So you are truly “inserting” something. 2) press the insert key again and everything AFTER the spot where you put your cursor will disappear as you type – so it takes the place of any additional text after that spot. Does that make sense? 🙂 I press it all the time accidentally – that’s why I know 🙂

I’m also usually bad about packing until the last minute. And I always end up forgetting something.

I just started reading your blog and I love it! Your smoothie this morning is definitely on my grocery list for next week, thanks for the idea. I found a great smoothie recipe in Self last year that I love and make constantly. If you are looking for something new here is the recipe (I highly recommend it):
    1 cup vanilla soy milk
    1 banana
1 tbsp. raw, creamy, unsalted almond butter
2 tbsp. whole ground flax seed meal
*i usually throw a few ice cubes in to make it colder*

I am SUCH a snacker when it comes to having to “hold off” until a later dinner. I feel like my “dinner” becomes a 2-3 hour process because I snack my way to the dinner table 🙂

Caramel corn looks delish, though, and speaking of Skokie….I’m visiting family in Glenview, IL. Do you know where that is?

My gosh, that caramel popcorn looks mighty tasty! I am not much of a sweets gal, but I find I have little resistance to the power of anything covered in honey, caramel, chocolate, or peanut butter. Also, I’m the same exact way when I eat with my family. Since I eat breakfast so early, I also eat lunch early and – surprise, surprise – prefer my dinner to be eaten around 6-ish. I hate going to bed feeling disgustingly full as well, but my family tends to hold me hostage during family meals. I’ve eaten as late as 10:30 with them.

Have an absolute BLAST in Europe, Julie! Take a ton of pictures and eat as much of that delicious food as you can!

I lived in the Loop, but I worked at an internship in Skokie (logical, right? Haha.). Oh my gosh. I am FREAKING OUT right now. Haha. Also, I love all the markings that it’s Kosher–wouldn’t expect anything less from something coming out of Skokie! MAN do I miss that place. (My internship wrapped up last Friday, so now I’m living back with my parents in Michigan temporarily until I go to Scotland for a month next week!).

    Have a fantastic trip!!
