Hooray for dinner leftovers!

A bunch of roasted veggies from last night’s dinner popped up in my lunch today in the form of a big ol’ salad.

Roasted Veggie Salad

My salad contained:

  • Romaine lettuce
  • Roasted broccoli
  • Roasted carrots
  • Roasted Brussels sprouts
  • Rotisserie chicken deli meat
  • Olive oil and balsamic vinegar

My dressing was a splash of olive oil and balsamic vinegar.

Dressing

My favorite part of salads is the sheer volume of food I can eat without feeling disgusting!

I love eating and eating (and eating), and a big salad leaves me feeling satisfied and energized, not overly stuffed and sleepy like other large meals can.

Organic Cheat Sheet

I don’t know about you, but I’ve read about a billion different articles about which fruits and vegetables to always buy organic. Somehow, I can never remember which ones fall into the “only buy organic” category and which ones do not when I’m at the grocery store.

FitSugar.com posted an adorable Organic Cheat Sheet, created by the Environmental Working Group, which may make remembering which produce to buy organic a little easier.

    you know, i really try to, but there’s only so much i can get at a decent price before i have to start doing non-organic…i know a lot of bloggers talk about being OK with spending more, and I totally am, on organic food; however, sometimes there really just isn’t the money! this sheet helps a lot though and makes me feel OK not getting EVERYTHING organic 🙂

    To be honest – I don’t. But seriously not 30 mins ago I printed off that cheat sheet to hang on the fridge….we’ll see if that encourages me to buy differently.

      i know!!! i crave them, too. it’s so weird. i cannot believe i didn’t even know about the deliciousness of roasted veggies until AFTER i graduated from college.

    That’s the cutest reminder cheat sheet I’ve seen! If I eat the peel on something, or it’s something I cant peel, I buy organic. I’ve read over and over about farmers that won’t eat the agro-business food they grow because they are scared of what is sprayed on there. That stands out the most to me when I debate organic vs. not for produce. However, for processed foods, I don’t worry as much because I know they are well, processed.

    I buy organic of the dirty dozen items plus anything else organic that I find affordable. For example, sometimes I find organic products cheaper than the “clean” non-organic version that I’ll buy. I’ll only buy organic meat, or at the very least, marked as grass-fed, no antibiotics/hormones, even if not certified organic.

    I had a huge salad with roasted veg for dinner last night- definitely filling!

    I buy a lot of things organic, but sometimes convenience trumps it and I go with regular. Organic produce can be hard to find, and so expensive!

    LOVE the cheat sheet! Unfortunately, I don’t currently buy organic because of the price difference. BUT, there are a few items on that list that I eat almost daily and I’m thinking that it would probably be a good idea to invest in them. Thanks for sharing! 🙂

    Isn’t olive oil + balsamic vinegar the BEST salad dressing?? 😛

    That salad looks soooo good. I will admit that I don’t buy organic as often as I should. During the summer, most of the veggies come from my own garden, so that does make me feel better.

    I do buy some organic produce….like everyone else depending on price. I guess cause in my head I tell myself I can at least wash some of it off.
    However, when it comes to meat, eggs and dairy. I buy Organic/free range regardless of price. Something about drug infused into the breast of a chicken and then my chomping on it is enough to make me vomit!
    Free Range meat all the way!

    I heard if you eat the skin like apples or peaches, buy organic and if not (bananas, oranges, etc) there’s no real need. that’s kinda how I do it.

    I usually buy organic root veggies…if it is grown underground I buy organic! I also always buy organic meats and eggs!

    Roasted veggies make the best addition to salads. I always buy organic meat/eggs but Im pretty selective about what produce I buy thats organic. When I can I buy organic from the grocery store but in the summer I get a lot of our fruit & veggies from the farmers market so Im not super concerned about it being stamped organic.

    LOOOOVE roasted veggies, especially when they are COLD served the next day on a new homamde salad!! I had that over the weekend and it was beyond delish! thanks for the cheat sheet 🙂

    I try to remember the “Dirty Dozen” when buying fresh produce, but that is easier said than done! I always buy organic apples and spinach but normally buy conventional foods otherwise (although I also try to buy organic berries). One food that I really should buy organic is romaine lettuce…I eat it every day but the organic lettuce doesn’t last nearly as long!

    Yes, I do buy organic! I love to buy local when possible too. Someday when I’m rich and famous (hehe), I dream of eating a 100% organic diet : )

    You inspired me to roast up some veggies this weekend. Eggplant, zucchini, peppers, onion, and mushrooms! I’m not a huge veggie fan and they were delish!! Tonight I chopped the leftovers and added them to arribata sauce with a little ground beef and mozarella! Delish! Ricotta would have been amazing maybe next time! Didn’t even need the pasta!

    Thanks for posting that graph… it is adorable and I am definitely going to remember this. I don´t have a crock pot yet, but I really want to get one when I get back to the states! Preferrably for chicken tortilla soup and chili… I think those will be the first experiments : )
