Salsa Chicken + Curried Cauliflower

Who says you can’t cross cultures when creating a delicious dinner?

Tonight’s dinner featured the flavors of Mexico and the flavors of India.

What can I say? I’m an equal opportunity eater. 😉

The Mexican portion of my meal included salsa chicken, which I prepared by placing two chicken breasts and half a jar of salsa in the crock pot and let it cook on low while I was at work (6 – 8 hours).

When I arrived home, I removed the chicken from the salsa and pulled the moist meat apart using two forks.

The flavors of India debuted on my plate in the form of curried cauliflower, which I enjoyed along with the salsa chicken.

To make the cauliflower, I tossed approximately two cups of chopped cauliflower florets with a bit of olive oil, salt, pepper and curry powder, before roasting the vegetable at 475 for 15 minutes, flipping the florets halfway through.

Curry is definitely growing on me…

I gotta get goin’ because Ryan needs the computer tonight to complete his fantasy football draft this evening.

    Wow that cauliflower sounds so delicious! It’s definitely a recipe I’ll have to try sometime. I’ve never tried curry before either, but I’m very open to trying it!

    I LOVE CHICKEN SALAD! this weekend i was craving chicken like mad and paced all over town to find a good chicken salad!! all i could find was tuna and salmon which was ok but im pretty sure in that moment i would have given you my left arm just to have a bite haha <3

    Top Gun is the BEST! My dad is a pilot and his call name was “Sky King”. hahaha—i firmly believe that the move is totally accurate 😉

    I love salsa with my chicken…I think I just like salsa in general. I eat it everyday 🙂 For me (salsa wise) the hotter the better. If I can sweat while eating it….I oddly enjoy it haha 🙂

    I’m just getting into curry too, and now I’m a little bit obsessed! I’ve been mixing cannelini beans, spinach, and eggplant with curry powder in a skillet. Delicious!! Your cross-cultural dinner looks divine!

    I have never had curry powder, but I love cauliflower–looks good! I’ve never experienced Top Gun, but I have experienced a ton of Fantasy Football. My boyfriend is in four leagues and even my sister plays.

    I don’t mind mixing cultures when it comes to food! I recently had an Asian stir-fry with a Mexican salsa/rice side. It’s all yummy to me!

    Roasted cauliflower tastes like popcorn to me. I like putting cheese on it too. What don’t I put cheese on though?

    I’m glad you’re starting to like curry! Indian is one of my favorite things to make and my boyfriends favorite to eat! I’ve never tried it roasted on cauliflower before though! Sounds delicious!

    Supper looks delish! My mom introduced me to curried rice, you just add a little curry powder to the water when you cook your rice (or couscous etc) and it adds flavor and color to the grain. Just be careful a little really does go a long way to flavoring the grain.

    I do the same thing with chicken and salsa in the crock, but 30mins before we eat I add a drained can of corn and drained and rinced can of black beans…soooo good!

    This is getting a bit more subjective, but I much prefer the Zune Marketplace. The interface is colorful, has more flair, and some cool features like Mixview that let you quickly see related albums, songs, or other users related to what youre listening to. Clicking on one of those will center on that item, and another set of “neighbors” will come into view, allowing you to navigate around exploring by similar artists, songs, or users. Speaking of users, the Zune “Social” is also great fun, letting you find others with shared tastes and becoming friends with them. You then can listen to a playlist created based on an amalgamation of what all your friends are listening to, which is also enjoyable. Those concerned with privacy will be relieved to know you can prevent the public from seeing your personal listening habits if you so choose.
