Deconstructed Dinner

Hooray for easy dinners thanks to the crock pot!

buffalo chicken 016Ryan and I received a brand new crock pot from my friend Kaitlyn at my bridal shower and I couldn’t wait to put it to the test!

I made tonight’s dinner by placing a pound of ground chicken in the slow cooker with one can of reduced-sodium chicken broth. I let it cook on low all day (about 8 hours) before stirring in three tablespoons each of Frank’s Red Hot Wings buffalo sauce and parmesan cheese to make a deconstructed version of my buffalo chicken burgers.

buffalo chicken 017 I served the buffalo chicken on a toasted everything bagel thin alongside roasted broccoli and cauliflower, tossed in olive oil and seasoned with garlic salt.buffalo chicken 025I love buffalo chicken! It reminds me of greasy bar food and I love that I can enjoy a healthy version that tastes just as good!

After dinner, Ryan and I split an Oreo Klondike bar (the last one 🙁 ). I need the sugar boost to motivate me to pack my suitcase.

Though I really detest packing, I am quite excited for tomorrow’s trip… way out west.

    Are the bagel thins you get whole wheat? They look like the ‘everything’ variety (which I love!) and I was wondering your thoughts on whole wheat vs not. I love the everything flavor, but end up buying whole wheat because it’s “healthier” 😛

      unfortunately they’re not whole wheat. the “everything” flavor is the only bagel thin i really like though b/c i find the other ones a bit bland.

    yum i love ice cream in any form!
    we share the same love!
    and your dinner looks yummy.
    I have broccoli and or cauliflower nearly every night roasted and topped with garlic salt!
    It’s soo yummy!

    Me + the crock pot are very, very close friends. Especially in cold weather! I actually threw a wonderful organic chicken in there (special treat as it was on sale!). Put some sliced lemons + herbs all around. Closed the lid and voila! Meal in 6-7 hrs with no work by me. 🙂

    Mmmm…I love Buffalo anything! Obviously I don’t correlate Buffalo Chicken with bar food (too young…LOL!) instead it reminds me of when our family would order 2 dozen buffalo wings on Sunday nights and watch America’s Funniest Home Videos. Talk about memories…YUM!

    I have that Franks Buffalo sauce..I love it! I’m not a hugeee spicy fan, but I love a little bit of a kick, so I find this sauce perfect! Your dinner looks great, I wish I had a crockpot with me here at school! Oh well! 🙂

    You should Ryan do a post on what he eats! My boyfriend has pretty much the same build as him, and he needs to eat probably 3 times as much as I do–I’m sure Ryan can’t be eating bagel thins and broccoli for dinner…just curious how you balance cooking for both of you.

      his eating differs from my thoughout the day but he really does eat exactly what i eat for dinner (just bigger portions). i’m trying to talk him into doing a post about his daily eats though!

    What kind of crock pot do you use (or did you get from your bridal shower)? I’m looking to buy a new one and I’m trying to obtain recommendations or suggestions. It is just me and my husband. Thanks!

      i got it from my bridal shower & i love it! it’s a hamilton beach slow cooker that has three different size options. LOVE.
