Lettuceless Salad

Today’s salad included lots of fresh veggies, tempeh and Asian sesame dressing, served alongside roasted Brussels sprouts.

I then let my stomach rest for a bit before heading into the break room to dig into the Thanksgiving feast provided by a company that shares the floor with my employer. (My work’s Thanksgiving potluck will take place on Tuesday.)

I intended to fill a small plate with some turkey, stuffing and a bit of sweet potato casserole, but I left the room with all of those things, plus a slice of apple pie.

Lunch: Round two? 😉

I hope I didn’t (once again) ruin my appetite for dinner!

Weekend Ahead

Hallelujah for the weekend!

Ryan and I are so grateful to have a weekend at home. We have intentionally kept our calendar clear because we have a bunch of stuff we need to do as well as a handful of things we want to do… like visit a corn maze and attend the Festival of Trees event at our local art museum.

Hopefully we’ll check all of the items off our “need to do” and “want to do” lists!  I think it will be a busy, fun and productive weekend.

    I love brussel sprouts! On Thanksgiving, my boyfriend’s mom makes them by sauteing the leaves with pistachio meat and coconut. They’re heavenly!

    Need to: do laundry! It’s been (embarrassingly) too long.
    Want to: go to a dinner concert tomorrow night in Oakland! It should be a great show.

    Need to do: Do something to plan my wedding. I may have finally decided on colors (that was painstaking), now my goal is to pick the bridesmaid dress styles and colors!
    Want to Do: Online Christmas shopping! I’ve said this for like a month and a half now 🙂

        Thank you! I need all the luck I can get. I am having such a hard time making any decisions! Since my wedding will be near the water in the late morning I wanted bright and bold summery colors: Sunflower yellow and some sort of light, bright blue, not sure exactly about shades. I’ve struggled because I know many people don’t like to wear yellow dresses to avoid the washed out skin look, but it just happens to be my favorite color ever! I guess they could wear blue, too… As you can tell, I am not the most decisive person. I looked at styles last night for the first time at a shop and couldn’t find anything remotely appealing. I think I am in for a long search!

          ii had the same thought! i wanted my bridesmaids to wear champagne but felt bad b/c i know they were concerned about looking pale. no one complained (to my face 😉 ) and they all looked stunning on our wedding day. it will work out perfectly! if you want yellow, go w/ yellow! it’s up to you & your friends will support you no matter what. 🙂

    What is the texture of tempeh? I’ve never had tofu so the world of soy products is totally foreign to me. The tempeh looks like chicken so I wonder if the texture is at all similar.

    I have waaaay too many needs this weekend. I host Thanksgiving so I need to get some cleaning, shopping, and dinner prepping done. The laundry is out of control. I have freelance work to get done for Monday. My dog desperately needs a bath, and if I think that I can’t imagine how guests on Thursday would react. Eek!

      i found it at my local grocery store (publix) by the organic/vegetarian/vegan products near the produce (refrigerated)

    Need to do: make enough room in our two-car garage for the two cars, patio furniture, gardening tools, huge pots, mower, woodshop, and 765 guy tools, etc. before the ice/snow comes. YUCK.

    Want to do: Relax and enjoy a few moments of quiet before the rush of the holidays with a cup of tea and a good mystery.

    AND – have made your pumpkin/spice cookies three times now – found that the Betty Crocker spice cake mix is the best and that I should make my own frosting for it as I cut corners and bought a can last night and it kinda overpowered the spice taste… but they’re a HIT each time! (My thighs don’t thank you, though…argh!) 🙂

    A corn maze sounds like fun! That would definitely go on my want list!

    Anyway, my need for the weekend is to get one of my bridesmaids fitted (she’s about 4 months pregnant now and she’ll be giving birth about 3 weeks before my wedding- eek!)

    My want for the weekend is to go to Disneyland for the holiday decorations on Sunday, but it’s supposed to rain out here in So Cal! Oh well, less crowds maybe?? 🙂
