Not-So-Overnight Overnight Oats

Last night during dinner Ryan asked me whether I cooked the asparagus differently than usual.

Nope! I roasted it the same way that I always do.

Apparently someone’s taste buds are coming around and beginning to like asparagus. My taste buds had a similar revelation a couple years ago and now I thoroughly enjoy the vegetable that would once cause me to shudder if my mom made it for dinner. Growing up, the simple thought of asparagus and broccoli made gag. I guess our tastes change!

After enjoying last night’s asparagus, I told myself I would roast a big ol’ plate of veggies to eat with lunch today.

Well, lunchtime rolled around and I wasn’t in a vegetable-eatin’ mood, nor did I feel like taking the time to cook something.

Plus, I wanted something cold and chocolaty.

I made myself a big bowl of overnight oats, but added a ton of chia seeds and cocoa powder to the mix before topping them off with banana puffs cereal so the oats were extra thick and satisfying.

Served with a cold, crisp apple and a stick of string cheese.

I made the overnight oats about 20 minutes before eating them and let them soak in the fridge while I worked away. I guess overnight oats don’t really have to sit overnight.

Question of the Afternoon

  • Was there a certain vegetable that you hated growing up that you now really enjoy? What is your favorite way to eat it?

Like I said, I hated asparagus  and broccoli and now I love them both simply roasted… or with hollandaise sauce.

    for sure brussel sprouts! cut them up, toss them with olive oil and sea salt and roast them until crispy brown at the edges at 400 degrees about 35 minutes. They taste like candy to me now!!

    Brussel sprouts were so gross, but now toss them with olive oil, a little sale & pepper & so yummy!

    I used to hate broccoli when I was younger. Now I enjoy it plain, or my favorite, with lots of cheese!

    I love love love roasted asparagus, seriously one of the best vegetables ever.
    And I’m totally trying that technique for “overnight” oats, it sounds amazing! 🙂

    I am obsessed with lima beans now! I LOVE them! I hated them as a kid…I thought they were “bitter”?! They are so buttery to me now!

    I think overnight pretend oats are in order for my dinner, with a little protein powdah’ for some staying power! 🙂

    I’m crazy and used to hate nearly all fruits growing up. I don’t know what made me think they were so gross. My thoughts on them didn’t change until high school, and now I absolutely love them!

    I used to hate brussel sprouts. Maybe it was the reputation linked along with them? They’re one of my favorites now!!

    I hated pickles, cucumbers and tomatoes when I was younger. While they are not my favorite foods now, I will definitely eat them. It’s funny how our tastes change!

    I never ate tomatoes until I tried a caprese salad in Rome during college!

    And I’m starting to come around on peppers. I only like them cooked, but I’m getting there!

    I’m always loved veggies, but my mom would always boil them or drown them in cheese sauce. But as I grew up and started cooking for myself, I realized that boiling them removes flavor and they don’t need cheese when cooked correctly. They’re delicious on their own!

    As a kid, I actually loved vegetables. However, I was weird and hated chicken! In an attempt to get me to eat it, my mom bought me Chicken Nuggets from McDonalds. Unfortunately, that failed because I picked off all the breading and left the chicken behind! Obviously, I’ve grown out of my strange ways and now I love chicken!

    I wasn’t a fan of too many veggies growing up, but a few I’ve come to enjoy are onions (on sandwiches, in salads, etc.), tomatoes, broccoli & cauliflower!

    I need to get on board with the overnight oats! And growing up, I hated mushrooms! But I tried them again as an adult when I was on a date with this guy who ordered them for us a size… turns out I loved them! I’ve been into mushrooms ever since… but the same can’t be said for the guy 😉

    I know it’s weird, but there is no single vegetable (or fruit) that I disliked growing up… and same for my sister. Apparently my parents did a good job teaching us to eat everything! lol

    PS : Just has a spoon full of peanut butter and though of reading your blog 😉

    I used to not like the taste of tomatoes, and would only have them very sparingly, buried in a salad or tacos. But now, I can eat them raw, and almost always have some sitting on my countertop.

    I also never wanted to try avocados, particularly in guacamole, because it was the color of boogers. But the moment I tasted avocado, I was a convert! 🙂

    I’d actually always liked vegetables as a kid, except PEAS. They were just nasty. I tried to like them and I couldn’t. Now I love them!

    I used to despise artichokes but I’ve started to like them – they are SO yummy baked with cheese over pasta.

    🙂 taste buds DO change. In fact, taste buds have a ten day life, which is why I always tell people that if they don’t like something healthy the first time they eat it (I hear this a lot with certain vegetables AND oddly enough, greek yogurt, I guess because they are used to regular yogurt which is higher in sugar) to continue to eat it until they get accustomed to the taste. It doesn’t always work, but 9 times out of 10, it does. I can’t tell you how many things that I’ve tried and gagged, then tried and tolerated, then tried and it was ‘soso’ then ate out of habit, then looked forward to eating and would not go back to the unhealthy alternative; case in point, all-natural PB vs “regular” (think Jiff or Peter Pan) PB. I used to think natural PB was flavorless, but now I hate regular PB, it doesn’t even taste like PB, it tastes like nutty wax! And regular sugar mixed in things like coffee or tea or whatever..too sweet, but stevia is just right! I used to hate stevia! Anyway, if you think about it, it makes sense that our taste buds have a life, because people in other countries get accustomed to eating very different kinds of foods.

    i absolutely despised peas and still do not like them very much. i used to hide them in the side of my cheeks and go to the bathroom and spit them in the toilet. cooked carrots were also on the no-no list, but other than that, i was a pretty vegetable-friendly kid!

    Growing up I was fortunate to always enjoy most veggies. I used to love eating a side of asparagus with vinegar. The one veggie I did not like was cauliflower, I avoided it at all costs, haha. It’s still not my favorite, but i can tolerate it. Although I am still not too familiar with it.
    Question- I am always curious when you post overnight oats, they look really good and i’m always trying to find more breakfast foods I actually like, but every time I try to picture them I picture them as still some-what hard with chocolatey liquid covering them. Does that make any sense?? LOL. Is this completely inaccurate or am I on to something?

    I used to hate brussel sprouts and beets. Now I love them. But sadly, my hubby’s taste buds haven’t come around so I don’t get to eat them 🙁 The only time I can enjoy those vegetables are if we go out to dinner (and with 3 little kids, that never happens)!!

    I didn’t like asparagus growing up either! And I would only eat broccoli if it had a layer of cheese on them.

    One veggie that I never tried but swore of all together was beets. When I had them for the first time, I LOVED them! So earthy and delicious.

    I will never ever be able to eat raw tomatoes though. Blech.

    now you say banana puff CEREAL, but those look an awful a lot alike the baby puff snacks that i get. haha. I guess that might technically be a cereal. -tee hee-

    My husband just realized his love for asparagus too! He was grilling it so much for me that he eventually fell in love with his cooking and had to try it for himself. He refuses to eat anyone else’s asparagus but his own but I’ll take it!

    When I was a kid my mother overcooked everything so the only veggies I would eat cooked were peas, corn and carrots.

    Now I cannot think of any I don’t like. Hurray for learning to cook!

    I still hate broccoli. Unless it’s raw and dipped in ranch. But the after taste lasts for hours. Yuck!

    I don’t like peas. I will eat them now, but I will never voluntarily make them.

    3 of the blogs on my feed had overnight oats today, I think the universe is telling me to try overnight oats.

    Actually, I’ve always loved pretty much all vegetables! The only one I didn’t like as a kid was tomatoes and I’ve learned to like them for the most part. I don’t eat raw tomatoes, but any form of a cooked tomato is OK 🙂
