Sweat It Out Boot Camp Workout

At work today, I taught a boot camp class and had a blast!

I am subbing for another instructor who is out for the next few weeks and followed her format for the class. (You can see one of her workouts in this post: Boot Camp Workout.) She creates six stations around the gymnasium and groups of five people hop from station to station to complete the workout. Equipped with an upbeat playlist and some basic gym equipment, I taught the class and walked around from station to station, providing modifications for some of the more difficult exercises and answering any questions.  

Here is today’s workout:

Sweat It Out BOOT CAMP WORKOUT

The class passed by quickly and everyone looked nice and sweaty by the end. Though I am enjoying teaching water fitness, boot camp-style classes are more my style since they’re the kind of workouts I absolutely adore. Fast paced and challenging!

Since I didn’t complete the workout with the class, I did my own upper body weight workout before finishing up work for the day (I worked the early shift again). I headed home around 1:30 p.m. 

Lunch

Once I made it back to our place, I threw together lunch using leftovers from last night and freezer food.

Cauliflower Chicken and Corn

I tossed some leftover chicken and roasted cauliflower in a bowl with corn that I heated up from the freezer. It was good, but the highlight was dessert that came in the form of truffles!

Chocolate Truffles with Walnuts and Dates

On Sunday afternoon, I made a batch of truffles by following a recipe that my friend Minda sent to me. They are gluten-free, vegan and freakin’ delicious! They taste like little bites of brownie batter.

Date Walnut Chocolate Truffles

To make them, first process two cups of walnuts in a food processor. Then add one cup of pitted dates and four tablespoons of cocoa powder and process in again until a “dough” forms. Roll into balls, toss in a bag with unsweetened coconut and enjoy!

I ate two this afternoon and loved every last bite.

    I love that these healthy treats are gluten free! I have been looking for more gluten free ideas and this just made the list of things to try for sure.

    Oh, those sound delicious! Do you think you could sub cashews? Allergic to walnuts. The best healthier dessert I’ve made lately are delicious black bean cupcakes, that are also gluten free. Even my nephews gobbled them up.

    Those truffles look so good. I’d never guess there were dates in them! Interesting! That boot camp workout looks like a good one! If I want to do it from home and don’t have a kettleball, what could I substitute for those exercises?

    My favorite healthy dessert is the old standby of banana ice cream. Still a top recipe in my book! Those balls looks delicious and I love the idea of using cashews!

    I know you have a PT certification, but can you teach group fitness classes with that certification or do you need to get a group fitness certification as well? I want to do both but don’t know where to start!

    Can’t wait to try this workout! A little confused though..do you complete each exercise for 45 seconds (without stopping in between) and then once your done all of the exercises, do you do the entire circuit again but complete each exercise for 30 seconds??

    Made the truffles today with natural almonds instead of walnuts. AMAZING these are as healthy as they are. They taste amazing. HOWEVER, I used half the amount of almonds and the full amount of dates. I suspect the almonds are drier than walnuts because it was the only way to get it to form the dough. I also added a tiny bit of the coconut to make them a bit more sticky since I couldnt get the dough to form correctly. BUT they taste AMAZING. Thank you for sharing.

    I make these balls but use prunes instead of dates. Although probably not as sweet, prunes don’t have as much sugar as the dates do, but still all the nutritional goodness that the dates offer. Sometimes I will blend in some dried apricot or cranberries if I want then a little sweeter. Fun to play around with and try different things.

    I made these with my 8 year old and he absolutely loved them, said they tasted like Almond Roca. Thanks for sharing such a healthy treat-disguised-as-dessert.
