Spaghetti of the Squash Variety

Spaghetti for dinner!

No, not noodles… Squash!

I purchased a giant spaghetti squash a couple of weeks ago and it has been waiting patiently for me to use it to create a delicious dinner.

Tonight was the night!

After prepping the squash, I set it in the oven and let it bake away while messing with Sadie. Sometimes she is just so fun to terrorize. 😉

I think she thoroughly enjoyed dancing and twirling to Bonnie Raitt.

“Let’s give ‘em somethin’ to talk abooooout!”

After 40 minutes in the oven, the squash was ready for noodleizing. (You may read about how I prep spaghetti squash here.)

Once I had a bowl full of squash noodles, I topped them with Newman’s Own Sockarooni pasta sauce and a bucket load of Parmesan cheese.

Newman’s Own pasta sauce was buy one, get one free at my local grocery store so I nabbed two jars. Ryan selected the Sockarooni flavor that we used tonight and it is a winner! Loads of flava!

Sadie clearly wanted to sample it as well…

Though my bowl of spaghetti squash was quite large, I still wanted a little somethin’ somethin’ when I was done eating, so I popped open a cup of Chobani strawberry banana Greek yogurt to enjoy while I blog away.

Now I’m off for an evening stroll with Ryan and Miss Sadie.

    I love spaghetti squash but it never fills me up! Good choice with the yogurt–that flavor is one of my faves.

    After reading about spaghetti squash a few times on your blog I just had to try it…it has changed my life! I think prefer it to regular noodles, I just love the crunchy nutty flavor itngivesnmy meal.

    I’m so glad it’s getting cool enough to enjoy hot dishes like spaghetti squash! Can’t wait til the temperature drops a little more!

    i made spaghetti squash once. i liked it…but i still felt like i needed noodles. i think i have to not think of it like i’m eating “spaghetti” then i’ll be ok ;p

    I haven’t had spaghetti squash in awhile! Looks delicious but there’s no way I could get the hubby to eat that.

    Spaghetti squash is gods gift to the world!!!! I make it once a week, I use spaghetti sauce, sloppy joe mix, cream of chicken, I buy hamburger helper boxes and just use the seasoning packets, ect!!!! amazing squash

    But PS to cut that cooking time in half, i just cut the squash in half, seed it, and put both halfs on plate in the microwave and nuke for 25 mins!!!! Perfect every time I promise, ive NEVER used the oven to make the squash…such a versatile food….ps tired the carbanada pasta tonight….amazingly good btw

    I always buy Newman’s Own pasta sauces- they are my very favourite. They are all so good! Right now I have the tomato basil flavour- super good! 🙂

    I love butternut squash, but I was intrigued the first time I saw spaghetti squash in your blog. I went out and bought a spaghetti squash, but I have yet to eat it. Perhaps tomorrow for dinner or Saturday for lunch?

    I’ve tried spaghetti squash once. I just remember it taking a long time to make! I do remember it being delicious though! I will have to try it again =)

    I love spaghetti squash, it was a staple that my mom made growing up. I seriously thought she was kooky and made it up, now I know better…..I’m going to have to filter this into next weeks food line-up.

    Dinner looks delish! But more important side note…Julie, you have introduced me to a very VERY dangerous world. One that goes by the name of ruelala.com. Hole.E.Mole.E. I have been able to restrain myself…until tonight. Purchase made!

    I just can’t seem to get my tastebuds to agree with the taste and texture of squash.

    Chobani is THE best yogurt in my opinion. So thick and creamy!

      it’s honestly hard to describe. it’s crunchier than other squashes, but is great in that it takes on the flavor of whatever you put on it (like marinara sauce).

    oh for sure…you just place the squash on the counter on top of a towel..cuts both ends off…set itup on it bottom…take a knife to the sqaush…in the middle..n apply pressure dwnward…perhaps ur superman boi can help u…but just continue to cut down the center until its halved…remove seeds..save seeds for toasting…dust both sides generously with garlic n onion powder…turn both sides dwn on microwave safe plate…put on high for 25mins….place in fridge for 5 mins tocool n then scoop out n add fav flavors!!!! hambuger helper lasangna flavor is pretty killer

    After seeing you make this over and over I saw some on sale this week and decided to give it a try…looked easy enough from your instructions right?? TOTALLY!! Super quick and simple, added some tomato sauce, meatless meatballs, and Parmesan and TA DA! Tasted really delicious and satisfied my spaghetti and meatballs craving! Thanks for the inspiration:)
