Italian Pizza Bake

Day one of Operation Get Out of a Food Rut has proven successful!

I arrived home from work today feeling motivated to get my groove on in the kitchen.

I spent some time perusing the web in hopes of finding and intriguing recipe to try this evening. When I stumbled upon this recipe for an Italian pizza bake from EatBetterAmerica.com, I knew I had a winner. 

I changed the recipe quite a bit because I didn’t have any eggs or chicken on hand, but it still turned out really well.

Servings: 2 Prep time: 10 minutes. Total time: 35 minutes.

Ingredients

  • 1/3 c. Bisquick Heart Smart baking mix
  • 1/4 c. water + 1 tbsp. ground flax seed (or 1 egg)
  • 1 tbsp. water
  • 1/8 tsp. garlic salt
  • 1/2 c. chopped green bell pepper
  • 1 large link chicken sausage, sliced
  • 3/4 c. canned diced tomatoes, drained
  • 1/2 c. shredded cheese
  • 1/8 tsp. parsley
  • 1/8 tsp. oregano
  • 1/8 tsp. basil

Directions

  • Heat oven to 400°F. Spray 8×4-inch loaf pan with cooking spray. In small bowl, stir Bisquick mix, flax (or egg), water and garlic powder; spread in pan.
  • In a skillet sprayed with cooking spray, cook bell pepper and sausage over medium-high heat. Stir in tomatoes and seasonings; cook until hot. Spoon over batter. Sprinkle with cheese.
  • Bake 20 to 23 minutes or until golden brown; loosen from sides.

The recipe I followed from Eat Better America said it made two servings, but I think Ryan and I could have easily eaten double our portions. If you are considering making this recipe for you and a loved one, I’d definitely consider doubling it.

Post Dinner Activities

After dinner we leashed up Sadie for a walk around our neighborhood. It was completely dark by the time we headed outside, and we were pleasantly surprised to see a bunch of Christmas lights up and twinkling. I can’t wait until more people decorate and we can take a drive around town and check out all the decorations.

After our walk, we headed to the grocery store to stock up for the week.

Guess what I forgot? The grocery list I made this morning.

I think I leave my grocery lists at home 99 percent of the time. Fortunately I’m pretty sure I remembered most of the items, though I may have to make a pit stop for some Parmesan cheese tomorrow…

Now it’s time to chill on the couch until crawlin’ into bed. I have an early morning running date and hope to get a good night’s sleep.

      haha yes… after we were done we both looked at each other like “okay, now what do you want to eat?” it was really good, but the recipe definitely needs to be doubled. i had a cup of yogurt & an apple right afterward. 🙂

    I just looked at the recipe and you definitely should have doubled it–the nutritional stats say that one serving only has 190 calories! Hope you make up for it with a yummy dessert this evening 🙂

      ahh well that explains it… yes, we both ate yogurt & an apple afterward… and i’m about to go make a mug of hot chocolate! it was a good recipe, but not very filling… i guess the calorie count explains why!

    Mmmmm that looks delicious!! I lost my grocery list and the grocery store today..it must have fallen out of my cart. I thought I remembered it all, but i forgot salsa. :/

    That looks so good! I love looking at Christmas decorations and lights. People in my development started putting up lights last week! I love it though. It definitely puts you in the holiday spirit 🙂

    There is a house near me that really goes all out with their lights, they even make the local news every year because their house is such an event (they open it up on christmas eve for kids to run around the yard, like a winter wonderland). I know it’s christmas time when they are all decorated.

    That pizza bake looks scrumptious, I’m going to have to try it!

    The list is always right next to the coupons I’m bringing. Definitely not going to forget those!

    I think the meal looks about the right size for me, I always pair pizza type things with a big salad. Definitely filling!!
