Crab Chowder

As you may already know, I’m a chowder-lovin’ girl. Sure soups and stews are delicious, but chowder is where it’s at!

Last night, I chopped loads of veggies so this morning I could assemble everything I needed for crock pot crab chowder without much effort.

I love veggie-packed soups. They make me feel extra healthy. Hooray!

I coated the veggies in one can of chicken broth before letting them cook on warm (not low… warm!) in the crock pot while I was at work.

Once I arrived home, I added the other necessary ingredients and wasted an hour waiting for the base of the chowder to thicken by playing in the backyard with Psycho Sadie!

Gosh I missed her crazy face this weekend!

Once Ryan arrived home, we took her on a 40-minute walk before heading home for some homemade crab chowder.

We walked into an apartment that smelled fantastic!

It was finally time to add the star ingredient of the chowder.

With the crab added, we dished the chowder into our respective bowls and dug in.

So, so good! My love for chowder lives on.

I ate two large bowls of the chowder and feel FULL. Not sure I’ll even need an evening snack tonight after this meal! Hopefully it’ll power me through an intense episode of The Bachelor tonight. The bachelor (Boring Brad) is meeting the families of the bachelorettes tonight which is always interesting. I’m hoping for a heave dose of crazy families tonight!

Crock Pot Crab Chowder

(Inspired by Corn and Crab Chowder from Family Circle; Serves 4, or 2 very hungry people who want seconds like me and Ryan)

Ingredients

  • 1 can reduced-sodium chicken broth (14.5 oz.)
  • 2 carrots, chopped
  • 1/2 yellow onion, chopped
  • 2 celery stalks, chopped
  • 2 red potatoes, chopped
  • 1 c. frozen corn kernels
  • 1/2 tsp. Old Bay seasoning
  • 1/4 tsp. thyme
  • 1 container crab claw meat (8 oz.)
  • 2/3 of a 12-oz. can fat-free evaporated milk
  • 1 tbsp. corn starch
  • 1/8 tsp. salt

Directions:

  • Place all vegetables except for the corn into a crockpot and top with chicken broth, Old Bay and thyme. Stir and let cook on warm for 8 hours or on low for 5 – 6 hours.
  • Combine milk, corn starch and salt in a small bowl and pour into crock pot. Stir and let sit for 60 minutes.
  • Stir frozen corn and crab claw meat into the chowder and serve once the meat and corn are warmed.
  • Sprinkle with additional Old Bay as desired and enjoy!

    Totally feel the same way about Brad. I feel like he’s poorly reading from a script. Like, no intonation and very cheesy. You would have to pay me a gazillion dollars to remain in the running!

    Chowders are amazing, especially ones in big bread bowls. My boyfriend made clam chowder this weekend, so we’ve had tons of leftovers!

    Your recipes are always so creative. I think if I got that creative things would go terribly wrong! Did you just start experimenting to see what went well together or do you just hope for the best?

    Mmmm . . . I made chowder last night. It would have been better with crab meat! Have you tried the cheesy tuna vegetable chowder Courtney posted on STSL? That’s a yummy (fast!) one, too!

    This looks great! If you substitute some jarred clam juice for some of the chicken broth, you will be surprised at how much depth of flavor it adds! Give it a try sometime 🙂

    Julie — regarding our shared OBSESSION with the SodaStream:

    my boyfriend and I got ours for christmas and RAN OUT of carbon over a week ago, because we were making soda like mad twice a day. It is just so darn easy! and there’s nothing unhealthy about just making the flavored water ones.

    I realllly need to figure out how to get the carbon can re-filled. I’m going through withdrawal. My fave flavor was the diet grapefruit soda. Runner up is the regular root-beer.

    I have really enjoyed reading your blog/ getting ideas. I know that this is unrelated to this post, but I share your love of peanut butter and coconut. This stuff is amazing. Maybe a little pricey, but 100% worth it. I enjoy the coconut peanut butter the best, while the chocolate one is not bad either. The coconut syrup is amazing over pancakes/ waffles as well. Hope you are able to enjoy 🙂
