Mozzarella-Stuffed Bruschetta Burgers

I’m very excited to guest post for Julie while she’s off exploring Europe (my invitation must’ve gotten lost in the mail!) Since the weather’s warming up all over the country, and I’m looking for any excuse to use the grill these days, I thought I’d share one of my all-time favorite grill recipes with you – Mozzarella-Stuffed Bruschetta Burgers with Balsamic Glaze!

I became obsessed with stuffing burgers last summer, trying everything from Apricot Glazed Turkey Burgers Stuffed with Goat Cheese to Stuffed Pizza Burgers. These Bruschetta Burgers are at the top of my list though. Garden-fresh tomatoes, gooey mozzarella cheese, and sweet balsamic glaze make an otherwise ho-hum burger, super special.

Mozzarella-Stuffed Bruschetta Turkey Burgers with Balsamic Glaze

Serves 4.

Ingredients:

1 lb 99% lean ground turkey breast

1/4 teaspoon salt

1/4 teaspoon pepper

1 teaspoon dried basil

1/4 cup parmesan cheese

1 cup finely shredded mozzarella cheese, divided

1 cup balsamic vinegar

Bruschetta

5 Roma tomatoes, chopped

2 cloves garlic, minced

1 Tablespoon extra virgin olive oil

1 Tablespoon balsamic vinegar

1/4 cup fresh basil, julienned

Salt & pepper, to taste

Directions:

1. In a large bowl combine turkey, salt, pepper, basil and parmesan cheese. Divide mixture into 8 portions.

2. Line a peanut butter jar lid with foil, then plastic wrap and press 1 portion of the turkey mixture into the lid. Heap 1/4 cup mozzarella cheese into the middle, then top with another portion of turkey. Press down to seal, then invert the patty onto a plate. Continue until you have 4 burger patties.

3. Grill burgers for 4 minutes a side over medium-high heat.

4. For bruschetta: combine all ingredients, and refrigerate for at least 30 minutes. Taste and adjust seasonings accordingly.

5. For balsamic blaze: heat balsamic vinegar in a sauce pan over medium heat. Let simmer, and stir frequently, until the vinegar has reached the consistency of thin maple syrup.

6. Top grilled burgers with bruschetta and drizzle with balsamic glaze.

One look into the center of the burger reveals the mouth-watering, ooey-gooey mozzarella cheese.

I can’t tell you how insanely yummy it tastes with the syrupy-sweet balsamic glaze and bruschetta made with fresh tomatoes and basil. I just love this flavor combo – it screams “SUMMER!”

    I made these burgers last night for my boyfriend and they came out SO delish! As they were cooking, my boyfriend commented on how good it all smelled and then was very impressed with how they tasted! Winning recipe, thanks! I’ll be stopping over to see what else you have in store!

    Also, one quick question: I didn’t have a PB cover to use and ended up molding by hand. It was a little bit challenging because the mixture is so sticky. Any suggestions of what else to use if you don’t have a PB cover on hand?
