Happy National Pancake Day!

In case you care to celebrate, feel free to check out a previous recipe roundup post I did with a plethora of healthy pancake recipes, including Greek yogurt protein pancakes and banana bread protein pancakes!

I wish I would’ve known it was National Pancake Day this morning because I would’ve made a batch!

Dinner

I seriously considered making pancakes for dinner, but wanted something savory. I contemplated making fritters of some sort but inevitably decided to go with a simple quesadilla since our food is running a bit low at the moment.

I stuffed a whole wheat tortilla with cheese, chicken and zucchini.

Fueled by ‘dillas, Ryan and I headed out back for puppy playtime with a very energetic Sadie.

Her catching skills were on point this evening, as were her ridiculous faces.

While outside, Ryan and I entertained ourselves by creating a competition that involved throwing nearby pinecones into the sinkhole in our back yard in between frisbee throws for Sadie.

It’s oddly entertaining.

    I love your pancakes! I really can’t wait to make the banana bread protein pancakes… they sound delicious AND good for me. Win-win!

    Do you and Ryan shout out the answers to Jeopardy and try to beat each other? My Dad won’t play me any more because I get way too competitive with him… haha 🙂

    Sadie is too cute!!!
    I just got back from my first trip to Florida and cant wait to go back! What a beautiful place to live. We were near Boca Grande and had a great time on the beach, swimming (we joked that people could easily spot the pale Canadians over joyed to be in the “frigid” waters) and meeting super friendly Americans from all over. I am hoping next time we can check out Orlando!!

    Pancakes didn’t fit into my day but everyone’s talk of them has me wanting some for bfast tomorrow! Protein pancakes made with 2 scoops just-add-water pancake mix and 1 scoop vanilla whey protein!

    Oops! If I had known it was National Pancake Day I wouldn’t have had waffles for breakfast 😉 Quesadillas are such a great way to turn random bottom-drawer refrigerator-leftovers into a meal, yours looks like it turned out pretty good!

    I had zucchini for dinner too! But instead I just had it as a side dish with red peppers. I’ll definitely have to incorporate the zucchini into a wrap in the future! 🙂

    I found out it was national pancake day this afternoon too so I gave in and made them for dinner. Who am I kidding, it doesn’t take very much convincing for me to have pancakes for dinner!!

    I wanted pancakes so badly yesterday! My fiance and I tried to go to iHop for the free pancakes and apparently so did everyone else. The place was a mob scene. So we left unfortunately.
