Deconstructed Tacos

…Also known as taco salad! 😀

I always look forward to taco night for two reasons:

  1. Tacos are delicious
  2. Taco leftovers make for an awesome taco salad for lunch

Right after I licked my plate clean finished dinner last night, I used the remaining lean ground beef taco meat, salsa and shredded lettuce to make today’s taco salad.

Taco Salad + Salsa

I added two large handfuls of frozen corn kernels to the salad to thaw overnight.

Note: Frozen corn is surprisingly delicious straight outta the bag!

Thursday's Lunch

I closed the Tupperware lid on this bad boy and shook it up until the salsa coated every last inch of lettuce.

Tossed Up

Darn good eatin’.

Wanna know what else was darn good eatin’?

My dessert.

Enter, Reese‘s peanut butter cups!

A coworker and I split a pack of this chocolate + peanut butter deliciousness and I enjoyed every last bite!

I’ve been eyin’ Reese’s since I saw the Easter Reese’s eggs on the shelves at the grocery store this week.

I <3 Easter candy!

What’s your favorite Easter candy?

I can’t get enough of those Cadbury mini eggs. They’re the best!

My mom loves Peeps… but she likes them a little stale and removes them from their packaging for a day before eating them. 🙂

    I have always been obsessed with the Cadbury Creme eggs! Now that I’m older, they are kinda gross to me. But I loved them when I was young!

      agreed! those reese’s eggs are phenomenal. i wish they sold them year round… (but maybe it’s a good thing they don’t!)

    I am not an Easter candy fan…but I guess I would say jelly beans?! Cadbury Cream Eggs are WAY TOO SWEET for me…I know I know…completely un-American! haha!

    I LOVE creme eggs, and malt balls. I gave up sweets for Lent, and they stare me down every time I’m in the drugstore!!

    My fave Easter treat is Starburst Jelly Beans, they are the best!! I already have a bag stocked up at my house for the holidays!

    The Reese’s eggs are both me and Andrew’s favorite!! My grandma usually puts mostly healthy stuff like luna and larabars in my Easter basket (yes, 26 and my g-ma still gives me a basket, haha), but she always knows to put in a few reese’s too! 🙂 So good!!

    Why is it that deconstructed meals are so fun?! I love meals with lots of parts to them 🙂

    taco salad is so good! love leftover taco stuff 🙂 the boy’s fave is reese’s but i cant really say what my favorite easter candy is. i gave candy up for all of 2009 and have not had much of it this year so i don’t really know!
