A Father’s Request

Tonight’s dinner was made at the request of my father.

His guidelines? Something healthy. Something with eggplant.

Ask and you shall receive!

Tonight I took care of our dinner entrée and made my family roasted eggplant lasagna.

Even though Ryan and I love this recipe, I wasn’t sure how it would go over with my lasagna-loving family since slices of eggplant essentially replace lasagna noodles.

I got to work preparing the ricotta cheese mixture while the eggplant slices roasted in the oven.

The mixture included skim ricotta cheese, mozzarella, fresh basil and parsley. My mom has a fresh basil plant and plucked a few basil leaves right off for me to use.

I’ve tried growing basil twice before and always forget about it and kill it, so having a successful basil plant in the house was quite a treat!

After layering marinara sauce with the eggplant and cheese mixture, I baked the lasagna for about 45 minutes.

My mom also prepared a side salad and baked fresh multigrain bread for on the side.

I took a bite of the eggplant lasagna and had high hopes for my family. Fortunately they all gave the lasagna rave reviews and everyone went back for seconds. Success!

I would highly recommend giving this recipe a go if you’re in the mood for a fun and delicious vegetarian dish.

Off to hang out on the couch with the fam and watch The Thomas Crown Affair!

    Looks really good! I also cannot keep a basil plant alive for the life of me. My friend has a huge one growing in her backyard- I’m so jealous. Every time I’m there I’m clipping off a few leaves to take home. Fresh basil is one of my alltime fav things!

    That looks great! I love how you incorporated so many beautiful colors on to your dinner table…it adds so much to the meal =) Does your mom have a breadmaker she uses to make multigrain bread, or does she do it from scratch? That sounds delicious, too…(I’m trying to get my family on the home-baked whole-grain bread train)

      no – she actually baked up the multigrain pizza dough from our grocery store’s deli! so random, huh!?

    It’s so weird you posted this. I bought some eggplant today so I could make eggplant lasagna tonight, but I forgot the ricotta. 🙁 Oh, well, I’m def. gonna give your recipe a try!

    I love eggplant. Just discovered Japanese eggplant, which is a fun and tasty veggie (if you could call a veggie fun 🙂 ) I need to make this while these babies are still in season at the farmer’s market.

    Mmmmm, thanks for the idea, Julie! I have been making more and more veg meals lately (I have strangely lost my taste for meat, it seems) and I have all the ingredients for this in my fridge! So, guess what will be on the dinner menu for tomorrow?!

    This recipe looks awesome! I’m definitely going to give it a go since i’ve been trying to limit the carbs. I loved hearty baked dishes. This one seems like it falls into that category.

    Yum! I’m not usually an eggplant fan, but this is something that I may like! I’ve had eggplant lasagna before, but the eggplant replaced the meat moreso than the noodles, so I like the sound of yours!

    I noticed a remote control on the dinner table picture- you don’t strike me as a television during dinner family.. Do you and your family watch television over dinner? I find myself doing it much more lately 🙁

    I was also intrigued by your mom’s multigrain bread! I’m glad others asked about it as well.. I will definitely pick up some dough from the market! I’ve never thought to do that.. Silly me

    Looks good but I’ll admit I’m a bit scared of a purple veggie. What does it taste like?

      it actually isn’t too flavorful! it’s rather bland, which allows it to soak up OTHER flavors! so glad you like the watermelon salad. now i kind of want one…

    Very hip and nice choice on the meal! I just crafted up my own version of lasagna, but made it using Zucchini instead of Eggplant and also roasted the Zucchini as well, and then submitted it to website I am free lancing for and they published it! … Glad yours was up to your pops standards…Amen for those fruits and vegetables finding their way back in your diet!
