Almond Butter Granola

Remember my peanut butter granola from last week?

Well, I morphed that recipe into another granola recipe today. Check this out!

Almond butter granola!

And you know what? It was just as delicious as the peanut butter version. Coming from a serious peanut butter addict, that’s really sayin’ something!

Almond Butter Granola (Makes eight 1/4 c. servings)

Ingredients:

  • 4 tbsp. almond butter
  • 4 tbsp. honey
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla extract
  • 2 tbsp. chia seeds
  • 2 c. oats

Directions:

  • Preheat oven to 325 degrees and spray cookie sheet with cooking spray.
  • Combine almond butter and honey in a bowl and microwave until almond butter is slightly melted (about 30 seconds).
  • Stir almond butter and honey together.
  • Add cinnamon and vanilla to almond butter mixture.
  • Stir oats and chia seeds into almond butter mixture, completely coating oats in the mixture.
  • Spread oats onto cookie sheet and bake for eight minutes before tossing oats and baking for another eight minutes until granola is slightly brown.
  • Let cool until granola is crunch and enjoy!

I made a double batch of this stuff this morning and since the first one is already gone, I obviously need to get this granola out of my house before I turn into an oat cluster.

    Hi Julie – have been silently reading your blog for a while now but GRANOLA is one of my favorite foods, especially any kind made with almond/peanut butter. I like it best plain!

    I love granola in a bowl with almond milk! Sometimes I even make overnight oats, and throw some in for extra texture, with a dollop of peanut butter (of course)!

    I love granola on top of yogurt, especially greek yogurt for a healthy, well-balanced and delicious meal! I also love it by the handful, in granola bar form, on top of smoothies, or as a dessert!!!

    I enjoy my granola this way:

    scoop the peanut butter on a spoon and then i smush the granola on the spoon

    Mmmm…I love granola really simply, with coconut milk and a sliced banana. But we don’t really get healthy granola in the UK…yours looks lovely, I’m gonna have to make some of my own with yor recipe, I think! 🙂 Really fun reading how everyone ELSE eats it too! Ideas 😉 xyx

    I like my granola straight up – yum!! But occasionally I’ll mix it up and sprinkle it on Greek yogurt.

    My favorite way to enjoy granola is with a yogurt breakfast–greek yogurt, fresh fruit, and some granola to top it off! Almond butter granola sounds delicious! 🙂

    I also love it atop my Greek yogurt or a sprinkle in my cereal when I’m a bit bored with it 😛
