Almond Butter Granola

Remember my peanut butter granola from last week?

Well, I morphed that recipe into another granola recipe today. Check this out!

Almond butter granola!

And you know what? It was just as delicious as the peanut butter version. Coming from a serious peanut butter addict, that’s really sayin’ something!

Almond Butter Granola (Makes eight 1/4 c. servings)

Ingredients:

  • 4 tbsp. almond butter
  • 4 tbsp. honey
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla extract
  • 2 tbsp. chia seeds
  • 2 c. oats

Directions:

  • Preheat oven to 325 degrees and spray cookie sheet with cooking spray.
  • Combine almond butter and honey in a bowl and microwave until almond butter is slightly melted (about 30 seconds).
  • Stir almond butter and honey together.
  • Add cinnamon and vanilla to almond butter mixture.
  • Stir oats and chia seeds into almond butter mixture, completely coating oats in the mixture.
  • Spread oats onto cookie sheet and bake for eight minutes before tossing oats and baking for another eight minutes until granola is slightly brown.
  • Let cool until granola is crunch and enjoy!

I made a double batch of this stuff this morning and since the first one is already gone, I obviously need to get this granola out of my house before I turn into an oat cluster.

    I like to sprinkle granola over yogurt w/berries in it then pick out all the big clusters and eat those first (food tastes better when you eat it with your hands). Then stir the rest up and eat it all, maybe with some honey too!

    I stumbled onto your blog through an app on my iPad, and I instantly LOVED it! After finding your blog, i stalkerishly (is that word lol) read alot of your old post. I look forward to reading it everyday, and I am so happy for you that you can make it your full time job!

    I never thought I would actually comment on a post, but all your recipes look delicious and would love to try one of them! I really want to try the granola with some greek yogurt or just as a dessert!

    Ahhhhhh this stuff must be incredible! Granola eaten by the handful is definitely #1, but I also love to sprinkle, err, LOAD it on top of Greek yogurt and oatmeal. 🙂

    Just with milk like cereal is my favorite. Although I’d never turn down a handful of it either of course, and I love parfaits (yogurt and fruit and granola mmm).

    I love mixing granola with different cereals and having it with milk. Or, I love putting it on top of yogurt with fruit. Yummmm 🙂

    I love granola in my vanilla greek yogurt, mixed with a little Liberte coconut yogurt (just a little since it’s more of a decadent yogurt), and of course by the handful! yum:)

    today i actually was experimenting with making homemade granola for the FIRST TIME (thats is very so horrible I know) but i think my fav way (which i also did today) was straight from the pan when it is warm and toasty 🙂 YUM YUM

    Definitely on yogurt! I’ve always wanted to try it on a smoothie bowl but I always forget to buy it or the ingredients to make it 🙁 Hopefully I’ll have some soon 😉

    I know it’s not that creative, but I love it in vanilla Greek Yogurt & also a little cup of it with some almond milk! 🙂 Love the little crunch it adds.

    I love granola sprinkled on anything! Yogurt, ice cream, fro yo, cereal, pancake, waffles, chicken, fish! And of course by the jumbo handfuls!!!! I wanna win!!!!!
