Almond Butter Granola

Remember my peanut butter granola from last week?

Well, I morphed that recipe into another granola recipe today. Check this out!

Almond butter granola!

And you know what? It was just as delicious as the peanut butter version. Coming from a serious peanut butter addict, that’s really sayin’ something!

Almond Butter Granola (Makes eight 1/4 c. servings)

Ingredients:

  • 4 tbsp. almond butter
  • 4 tbsp. honey
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla extract
  • 2 tbsp. chia seeds
  • 2 c. oats

Directions:

  • Preheat oven to 325 degrees and spray cookie sheet with cooking spray.
  • Combine almond butter and honey in a bowl and microwave until almond butter is slightly melted (about 30 seconds).
  • Stir almond butter and honey together.
  • Add cinnamon and vanilla to almond butter mixture.
  • Stir oats and chia seeds into almond butter mixture, completely coating oats in the mixture.
  • Spread oats onto cookie sheet and bake for eight minutes before tossing oats and baking for another eight minutes until granola is slightly brown.
  • Let cool until granola is crunch and enjoy!

I made a double batch of this stuff this morning and since the first one is already gone, I obviously need to get this granola out of my house before I turn into an oat cluster.

    step 1: remove and eat the largest chunks straight-up 😀
    step 2: grab a handful of the rest and eat with a splash of milk

    I love granola on top of my oatmeal in the morning. It adds a crunch and I don’t need to put extra sugar in it.

    i love granola with yogurt or soy/almond milk.. and adding a little bit of berries makes it. havent had granola in the longest time because its so addicting.. just like PB.!

    I started putting granola in my greek yogurt because at first the texture was more than I could handle. Eventually I learned to love the yogurt on its own, but it still reigns supreme as my favorite way to enjoy some granola.

    Looove granola in a yogurt bowl…but mostly straight into my mouth from the bag! My dog LOVES your peanut butter granola – it’s the only “treat” that doesn’t make her sick!

    I love granola in my PUMPKIN OATMEAL! So so so good. I also love it in trail mix. Sweet AND salty. Can’t go wrong. 🙂

    I love adding granola to my oatmeal! Sounds a little repetitive but I love the crunch and creaminess together!

    You just combined two of my great loves: almond butter & granola — this looks so good! I think Granola is good all on its own, though sometimes I enjoy it on top of greek yogurt & fruit for brekkie!

    No clue, I am still learning to eat granola. I did find some granola clusters, strawberry I think it was, that was pretty good. No clue who made it though.
