Almond Butter Granola

Remember my peanut butter granola from last week?

Well, I morphed that recipe into another granola recipe today. Check this out!

Almond butter granola!

And you know what? It was just as delicious as the peanut butter version. Coming from a serious peanut butter addict, that’s really sayin’ something!

Almond Butter Granola (Makes eight 1/4 c. servings)

Ingredients:

  • 4 tbsp. almond butter
  • 4 tbsp. honey
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla extract
  • 2 tbsp. chia seeds
  • 2 c. oats

Directions:

  • Preheat oven to 325 degrees and spray cookie sheet with cooking spray.
  • Combine almond butter and honey in a bowl and microwave until almond butter is slightly melted (about 30 seconds).
  • Stir almond butter and honey together.
  • Add cinnamon and vanilla to almond butter mixture.
  • Stir oats and chia seeds into almond butter mixture, completely coating oats in the mixture.
  • Spread oats onto cookie sheet and bake for eight minutes before tossing oats and baking for another eight minutes until granola is slightly brown.
  • Let cool until granola is crunch and enjoy!

I made a double batch of this stuff this morning and since the first one is already gone, I obviously need to get this granola out of my house before I turn into an oat cluster.

    I take a spoon, dip it in peanut butter, then dip the spoon in a bag of granola so I get extra peanut buttery-granola goodness, yummmm

    Straight up no chaser, as a cereal with a little milk, topping on froyo, mixin in greek yogurt or regular yogurt, or over a smoothie.

    I love granola on yogurt…I’m not a huge fan of the consistency of yogurt but if I have something crunchy mixed in like granola or chia seeds, it’s a total game changer!

    I made the peanut butter granola this morning with the addition of dark chocolate chips (mixed in after it cooled) and at least half the batch is gone– some enjoyed in a bowl with yogurt but mostly just small handfuls here and there. Straight out of the container is the way to go!

    Ahh, I want this! I love almond butter but we never get to buy it because its so expensive; I can only imagine how tasty it would be in granola form! I love granola just straight up… either by the handful, or with a splash of milk! I just can’t bring myself to mask any of the delicious flavor and crunch by mixing it with anything else!
