Almond Butter Granola

Remember my peanut butter granola from last week?

Well, I morphed that recipe into another granola recipe today. Check this out!

Almond butter granola!

And you know what? It was just as delicious as the peanut butter version. Coming from a serious peanut butter addict, that’s really sayin’ something!

Almond Butter Granola (Makes eight 1/4 c. servings)

Ingredients:

  • 4 tbsp. almond butter
  • 4 tbsp. honey
  • 1/2 tsp. cinnamon
  • 1/2 tsp. vanilla extract
  • 2 tbsp. chia seeds
  • 2 c. oats

Directions:

  • Preheat oven to 325 degrees and spray cookie sheet with cooking spray.
  • Combine almond butter and honey in a bowl and microwave until almond butter is slightly melted (about 30 seconds).
  • Stir almond butter and honey together.
  • Add cinnamon and vanilla to almond butter mixture.
  • Stir oats and chia seeds into almond butter mixture, completely coating oats in the mixture.
  • Spread oats onto cookie sheet and bake for eight minutes before tossing oats and baking for another eight minutes until granola is slightly brown.
  • Let cool until granola is crunch and enjoy!

I made a double batch of this stuff this morning and since the first one is already gone, I obviously need to get this granola out of my house before I turn into an oat cluster.

    I love granola straight out of box- Cascadian Farms Cinnamon Raisin is my fav!- and dipped in creamy pb! A dangerously delicious concoction- I may just have to go have some now!

    My favorite way to eat granola is on top of plain Greek yogurt with blueberries and a drizzle of honey. Delish! 🙂

    My FAVORITE way to enjoy granola is with bananas and almond milk….mmmmmmmmm 🙂 By the handful comes in as a close second!

    Well, granola is great on it’s own…:-P

    I’ve gotten on a kick with granola in my morning yogurt, but last week I made Easy Apple Crumbles from a recipe on FitSugar. You just put some granola on top of applesauce and sprinkle with cinnamon. Soooooo good! It makes me want fall to roll around so I can do it some more.

    I love granola with some greek yogurt. I actually made your peanut butter granola and I enjoyed it, I added some cinnamon.

    I think granola can stand on its own. I like it by the handful with lots of almonds and maybe a few chocolate chips in it…yum

    The best way to finish a batch of granola is eating the clusters by themselves then using the rest as a yogurt mix-in!
