Cheesy Meatless Sammie

Sometimes several days will pass and I’ll think back on my meals and realize I’ve not consumed any meat. While I’m not a vegetarian, I do not typically crave meat and enjoy getting my protein from sources such as yogurt, cheese and peanut butter (of course).

Today’s lunch was a meatless sandwich, full of ooey-gooey cheese.

I first toasted a whole wheat Arnold’s sandwich thin before spreading one half with a Laughing Cow light Swiss cheese wedge and melting mozzarella cheese on the other half.

I topped the cheesy bread with fresh spinach and a sliced plum tomato to complete my lil’ sammie.

I loved the contrast between the crisp bread, melted cheese and fresh, cool veggies. Very satisfying! I only wished I had a hot cup of soup to enjoy along with my sammie. Oh well!

    Looks great to me! No meat = happy me. I have had a strange aversion to it lately, but I’m not a vegetarian.

    I am not a vegetarian, I like meat way too much but I love cheese even more!

    I am a vegetrain and have been for a while now. I used to eat a lot of cheese but now I stick with seeds and nuts for protein.

    yummm looks great!!

    i am not a vegetarian…i have cut back on my meat intake but in no way shun it out of my diet! lean protein like turkey breast, chicken breast, lean steak-love it!
