Chickpea Pita Pocket

Today I finished up the can of chickpeas I opened up yesterday. Lunch was my third chickpea meal in less than 48 hours!

What’s your favorite chickpea recipe?

I combined my remaining chickpeas with veggies I had leftover from dinner and coated everything  in marinara sauce.

Saucy Chickpeas

I stuffed my saucy ‘pea mixture in a whole wheat pita pocket with a handful of fresh spinach. It was yum.

After work I’m off to an Invisalign appointment and plan to scoop up the pup for a quick trip to the dog park before Ryan gets home. On Monday he left for the University of Florida to represent his company at a career fair on campus. I missed him last night. Fortunately I was able to entertain myself with The Bachelor. 😉

What’s your favorite reality show?

I am a huge fan of The Biggest Loser.

    Dang it…I totally missed the bachelor! Shoot! Spoil it for me…who went home?! My favorite reality shows are Top Chef and Project Runway! Love them both!

      michelle got booted before the rose ceremony (thank goodness!)… he also kicked out elizabeth (the “you can’t kiss me girl”) and valishia (yeah, i didn’t know who that girl even was!)

    Love most of them on E! Also Dancing with the Stars, and EVERYTHING on the Food Network. I can’t get enough.

    I agree with Jessica.. IM a HUGE fan of E and the Foot Network! Back in the day I used to be a big Real World/Road Rules fan, too.

    I love roasted chickpeas with sea salt and olive oil. Hummus is also yummy!

    I made a curried chickpea salad the other day for lunch– it was delicious! You should check it out– it would be great stuffed in a pita 🙂

    mmmm this looks amazing. I love chickpeas. I love making homemade hummus, especially a spicy hummus I made recently!! Favorite reality tv would be either real housewives or American Idol

    I love chickpeas… so many fantastic ways to eat them. I love spicy Indian dishes that have chickpeas in them. Can’t remember any names, but I always look for them on the menu.

    I love the Biggest Loser and the Amazing Race. My boyfriend and I eat sushi while watching the Race so it seems more exotic at home. Haha.
