Cocoa Oatmeal Cookies

November 30, 2011 by Julie 72 Comments

I have quite a yummy recipe to share with you today!

            cocoa oatmeal cookies 051

This recipe is brought to you by: My internet went down and to avoid freaking out over my lack of ability to send out an important article, I made cookies.

(Follow up: Then I ate way too many of the cookies, drove to Burger King and hopped on their internet from the parking lot to get my work done and publish this blog post.)

Cookies make any situation a little bit better.

And good news! These cookies are made with oats, whole wheat flour and canola oil which means they’re completely healthy… right? Sure.

Cocoa Oatmeal Cookies

Makes 10 – 12 cookies (depending on how much dough you eat)

Ingredients:

  • 1/4 cup whole wheat flour
  • 1/4 cup flour
  • 1 teaspoon cocoa powder (may increase to 3 teaspoons if you desire a more chocolaty cookie)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 3 tablespoons canola oil
  • 1/2 teaspoon vanilla
  • 1 cup old fashioned oats

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine flours, cocoa powder, baking powder, baking soda and salt in a large bowl.
  3. In a smaller bowl, combine sugars and beat in one egg.
  4. Mix canola oil and vanilla into sugar mixture .
  5. Slowly beat sugar mixture into flour mixture. Your dough should be slightly runny.
  6. Gradually beat oats into mixture until a thicker dough forms.
  7. Use a tablespoon to portion out cookies onto a cookie sheet lined with parchment paper or sprayed with cooking spray.
  8. Bake for 8 – 10 minutes, until tops of cookies are slightly browned.

I was really impressed with how these cookies turned out since I was just playing around in the kitchen and didn’t have high hopes. I loved the light touch of cocoa flavor and the chewiness from the oats. These will definitely be made in this house again!

Those cookies look so chock full ‘o oats! If you threw in some chocolate chips with the cocoa powder too, that could kick any chocolate craving. Oats, whole wheat flour, canola oil, and dark chocolate = still healthy cookies 😉

I would totally ‘take’ some Internet if mine went down and I had work that had a deadline. I am sure you’ll eat at Burger King at some point to repay them. Hah 😉

Ughh internet issues are the worst! There’s something so stressful about technology failing right when you need it the most! And those cookies look delish! I think I would make mine extra chocolatey and add some dark chocolate chips too! (Love how you base your serving size on the amount of dough that is eaten.. haha amazing!)

The cookies just had to turn out, especially since everything else was going wrong! I bet they would taste so delicious as is, but I couldn’t help but imagine cranberries and white chocolate chips in these!! Maybe I’m a little too hungry today?

P.S. Bootlegging internet from Burger King is so something I would do. But, I’d probably also order a whopper junior. oops.

Other places to bootleg internet – Panera, Holiday Inn (or any other budget hotel that has free internet….Super 8, Days Inn. Might be hit or miss though, Holiday Inn its always a gurantee). If you have trouble connecting, just connect to the network then type in your browser bar 1.1.1
That will take you to whatever screen you need to go to to connect to the local network.

I’m a “pro” at bootlegging internet in times of work induced desperation. I hope its not illegal, since I’m a lawyer and all!

It was probably about 30 minutes between the time I read this post and had these babies all mixed up and in the oven. I’m wondering how many batches of these cookies are being made all over the country right now…would be fun to find out! I’m in Massachusetts… I LOVE how so many of your recipes use ingredients I have on hand, by the way. Keep ’em coming!

I live in the country, so our internet is always up and down and in and out depending on how the wind blows. I usually just drive up and down the road a bit and see who doesn’t have locked wireless and tap in. 🙂 Redneck I know.

My mother in law has been making cookies like this for forever. A Hershey’s recipe from like 1920. They are my husband’s favorite. Only change is she adds a touch of almond extract in addition to all of the other ingredients. Makes it super super yummy. I usually have to make a double batch because the fam gobble them up for breakfast too!

No such thing as ‘too many cookies’. Literally. Every time people say that they ate too many cookies, it ends up being something like “6” or “8”– that is not a big deal. Enjoy it. If it was “I ate an entire box of hydrogenated-trans fat filled cookies–for every day this week”… then there would be a cause for concern. These look wonderful! ps- I consider 10-12 a single serving portion! lol Especially with ingredients like this- I would estimate it at 80-90 kcal max! GREAT JOB Julie, I definitely need to make some cookies soon!

I was in the process of making these and then realized that I didn’t have the brown sugar so I added some extra regular sugar. I also added the extra cocoa powder. I’m not sure if anyone else had a similar issue but I had to bake my cookies for 15 minutes and they still fell apart a bit. They were still delicious though.
