Coconut Macaroons

I’ve been a fan of coconut ever since I was little.

When I would go trick-or-treating, I would freak out over a fun-size Almond Joy like other kids would freak out over any king size candy bar.

And let’s not forget the night I ate coconut cake for dinner…

In all my years of loving coconut, I’ve made numerous desserts with coconut and even breakfast protein smoothies featuring coconut, but I’ve never attempted a traditional coconut macaroon until tonight!  macaroons 013I had a big tub of unsweetened coconut shavings on hand and after seeing Gina make some delicious-looking macaroons on her blog I knew exactly what I wanted to do with ‘em.  pork 019I Googled macaroon recipes and found that they are extremely simple to make.

Score! 

I followed an easy recipe from AllRecipes.com and within 20 minutes had a cookie sheet full of delicious coconut macaroons!

I had a grilled cheese and leftover roasted asparagus as well, but these lil’ macaroons definitely stole the show!  

If you’re a coconut lover, I promise these will make your mouth happy!

Coconut Macaroons (Recipe from AllRecipes.com)

Ingredients:

  • 1 1/3 cups flaked coconut
  • 1/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 2 egg whites
  • 1/2 teaspoon vanilla extract
  • Directions:

  • In a small bowl, combine the coconut, sugar, flour and salt. Stir in egg whites and vanilla; mix well.
  • Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 325 degrees F for 18-20 minutes or until golden brown. Cool on a wire rack.

      I’m cuckoo for Coconuts 🙂 I’m glad you finally made macaroons and that the recipe was a success.

      You should try adding chocolate to your macaroons next time. It’s a great combination. But classic macaroons are delicious on their own too

      Mmmmm macaroons are so good!! And I tried Gina’s at HLS- they were absolutely magnificent. Yours look pretty amazing too though- I love how fluffy and white they look!

      You should try making them by combining 1 avocado, sugar, and the coconut. I just eyeball the amount of the sugar and coconut. They are so delicious and a bit healthier. Plus they turn out green! St. Patty’s Day treat maybe?

      Strangely enought I do not even like coconut but I LOVE coconut macaroons. I made some this past summer and dipped them in chocolate. They were glorious 🙂

      I can never make these — I’d eat it all up myself. I should send you my Brazilian cake recipe that has coconut in the batter, along with chocolate flakes. It’s awesome!

      I always mix dried coconut when I bake cookies too. Hmmmmm…

      wow i haven’t made macaroons in for-ever!! So delicious though, I can guarantee my dessert would have been chock-full-o those things. try putting some peanut butter on them 😉

      I know someone commented on adding chocolate to the macaroons, perhaps that chocolate could come in the form of white chocolate??!! … I had a batch of white chocolate chip macadamia nut cookies, so the thought of it was freash on my mind lol
