Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    I love eating nuts mixed with dark chocolate chips and raisins (in homemade trail mix) or on top of a protein muffin for dessert..!

    I love nuts! I eat them in any form I can get em 🙂 butter, slivered, salted, roasted, covered in chocolate yummmmm! Can’t go wrong!!

    i enjoy walnuts as a perfect afternoon snack or after the gym snack. Add a little sea salt to unsalted walnuts and it has me drooling…!!

    I love putting sliced almonds into my oatmeal in the morning! As a snack, lightly salted mixed nuts are my fave.

    I eat nuts like daily! Specifically Almonds even though I also LOVE me some PECANS LOL! I love to add them to greek yogurt… Its so YUMMY! They are also good in salads too 🙂

    i LOVE peanuts in butter form smooth and chunky! also like honey roasted peanuts or just plain almonds as a healthy snack option
