Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    I LOVE to have nuts in my Greek Yogurt and with dark Chocolate! MMmmm. They also taste amazing with oatmeal. Sometimes I will slice a banana in half and bake in the oven for a few minutes. Then sprinkle nuts atop! Tasty! (:

    What don’t nuts go with? I put them on salads, oatmeal, yogurt, in cereal…one of the best snacks ever.

    Nuts are one of my favorite foods! I like them plain, right out of the bag, or dipped in hummus. I know that sounds crazy but salted almonds dipped in hummus are delicious!!

    In Seven Layer Bars…a mix of almonds and walnuts sandwiched in between chocolate chips, butterscotch, coconut and a graham crust is THE BEST!

    I am a emergency room nurse and work 12 hour shifts. Nuts are the perfect quick snack to keep in my pocket while im running around busy.

    I love salted nuts. My favorite are pistachios…or cashews…or pumpkin. Okay, I enjoy them all. No discrimination here:D

    I actually like them plain in their natural state! I don’t like nuts in my baked goods or my ice cream.

    I love them in trail mix, especially with chocolate! Yum! The best nuts I had were homemade at Oktoberfest in Munich Germany this past fall- cinnamon sugar almonds, so good!!

    I always have a container of raw nuts with me in case I need a snack on the go, but my favorite way to enjoy nuts is probably chopped walnuts mixed into Greek yogurt with a drizzle of honey. So tasty! Thanks for an awesome giveaway – the butter toffee pecans sound delish!

    There is a music venue I used to go to back home that would sell cinnamon and sugar roasted nuts. They had the most amazing scent and were so delish! I haven’t had them in years, but I love them so.

    I create my own trail mixes for snacks on the go! I mix various different cereals along with almonds or walnuts!!
