Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    I can’t have one favorite way to enjoy nuts. I love eating them plain, I love nut butter, i love toasted walnuts/pecans in pancakes, etc.

    My favorite way to eat nuts are just by the handful as a snack, I usually have them as my mid-morning snack!

    I love any nuts that are butter toffee flavored!! My favorite way to eat them is directly from the container. Mmmm. Now I want some nuts! lol

    Whether I am making banana bread, pumpkin bread, carrot cake or zucchini bread, I always add a handful of nuts to the batter. I love the texture that the nuts give each of the breads.

    Those pecans sound amazing! I like eating nuts as a snack, mostly plain. They’re great in the afternoons before dinner!

    sounds delicious! my favorites are roasted pecans on a green salad (thanksgiving specialty!) and roasted almonds on toast with slices bananas. yum!

    Oh my goodness there are sooo many ways how can I pick just one!?! I think I like snacking on cashews paired with dried pineapple the best 🙂

    Does “butter-form” count? If so, then that’s definitely my favorite way to enjoy them! Peanut butter, almond butter, cashew butter—it makes no difference to me; I love them all!

    I love nuts in so many ways! On their own (almonds, walnuts and pecans are my favorite), dipped in chocolate (macadamia are AMAZING), with greek yogurt, as a part of trail mix, on top of ice cream (peanuts and fudge!) and most importantly- PEANUT BUTTER! Yum.

    I usually just eat a small handful when I need some instant energy/food and don’t have much time. But I have a great recipe, and it’s really easy too 😉

    Put some applesauce in a microwave-safe bowl and warm (how warm depends on your own preference). Then, top with some granola and/or nuts and cinnamon. It’s like a warm apple crisp, but it’s much healthier! The nuts add a punch of protein.

    By the way, what the account exec asked you? A total TWSS.
