Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    gotta say my favorite way to eat nuts is lightly salted and roasted! specially pecans! or walnuts. have yet to decide which i prefer!

    Mostly I love nuts plain, on their own! I’m always on the go for work, so having a stash of nuts in my car is great for a quick snack. Those butter toffee pecans look amazing!!

    During class! I love pulling out nuts from my backpack and munching during lecture.

    Also love nuts in my oatmeal in the morning, especially with a dollop of pb:)

    I like to throw some nuts on top of my banana PB “boats” or just eat them by the handful. Sweet pecans are one of my favorites!

    I have a delicious salted nut roll recipe from my aunt that I use plain peanuts for…otherwise straight out of the container for a quick snack

    I loving having nuts when I am craving something salting. I also feel good after eating them knowing I got many vitamins and minerals and not all the crap in tortilla chips!

    Favorite way? Gah that’s impossible! I love them on or in basically anything and plain. Peanut butter and almond butter are probably my favorite things in the whole wide world though, so I’d have to say my favorite is a spoonfull of either of those.

    I love them with everything, brownies, muffens, salads…I also love almonds with honey (put it in the freezer for a little while and it is simply delicious).

    Pecans are my favorite too! I always pick them out of the mixed nuts – which my husband just loves. 🙂 I love them solo or with chocolate or popcorn, and I also love them in oats!

    I enjoy roasted almonds as a midday snack during the work week, and I also top my oatmeal with chia seeds and walnuts for some healthy fats. Yum!

    I love peanut butter or nuts swirled into a low-carb vanilla yogurt. Perfect dessert at the end of the day. (too bad I gave up PB and nut butters for lent, but real nuts are A-Okay!)
